    Something I’ve learned recently...pressured cooking beans breaks up the resistant starch so it’s no longer resistant. I was having inconsistent results with the resistant starch diet until I started slow-cooking the beans, and since canned beans are pressure-cooked they are also off my menu. And I suspect that microwave foods that contain resistant starch will also break down the starch so it’s no longer resistant. I can feel my metabolism increasing the more resistant starch I eat.

      Microwaving is one of the safest and most efficient ways to cook food. The other two comparable methods are boiling and steaming. Cooking your vegetables and legumes in these way ensures they keep their vital nutrients and that temperatures don't get high enough to start forming cancer causing chemicals

    Hi Dr. Christianson! I am always thankful for all of the information and research you share! I have been trying to figure out how much RS and what type is in Chestnuts. On the internet, it sounds like it is probably RS2. One serving on the roasted chestnut package says 3g fiber, but it doesn’t specify what type. Do you know where I might find this info definitively?

    one important question, after cook the rice and cool down several times. Can i eat it when hot or i should eat cold rice for more amount of resistance starch? i just like to eat food when its hot.

    • @josuevaldez
      @josuevaldez 6 ปีที่แล้ว +10

      Joe Rogan had Chris Kresser in his podcast and hi said its ok to eat it hot if you've let the rice cool down. The more you reheat and cool down the more resistant it gets.

    • @bobkukiel5534
      @bobkukiel5534 5 ปีที่แล้ว +3

      Another youtuber states that the structure of the starch changes when heated to a non-resistant form, and you must let it cool before you eat it to give the starch time to change back to the resistant form. They said that refrigerated starch is best.

    Resistant starch has negligible effect on blood sugar. So for diabetic person should not eat food high in starch.

    • @joemann7971
      @joemann7971 3 ปีที่แล้ว

      Actually, resistant starch is complete BS. If you use a continuous glucose monitor, you'd see just how much BS it is. The inclusion of things like fats does blunt the sugar spike.
      There is a series of 4 videos by a Steve from Serious Keto where he tests out many of these resistant starch myths to see if its possible for him to eat carbs by doing many of these things.
      Turns out, resistant starch actually spikes blood sugar much higher than just eating the foods plain, but it just comes down sooner. So, to those that are using regular glucose monitors, it seems like it didn't spike their blood sugar as much, since they check it after 2 hrs.
      Its outright dangerous that a doctor, goes out and recommends this garbage without testing it out for himself to see if its actually true.
      Dr. Ken Berry conducted his own mini experiment with a few of his patients that all had continuous glucose monitors. They all came up with the same results. Granted, it wasn't a proper study, but it helped expose this lie about resistant starch. There is another little mini experiment by Steve from serious keto, where he tests out different foods, using a continuous glucose monitor. Turned out, resistant starch spikes blood sugar much higher than its supposed nonresistant counterpart. It just comes bad down. That basically say the body is absorbing it much quicker than normal, which is the complete opposite of resistant.

    • @joemann7971
      @joemann7971 3 ปีที่แล้ว

      Resistant starch is a myth. Dont fall for this BS. If you're worried about blood sugar, you need to be looking into keto. Check out a video from Dr. Ken Berry talking about resistant starch.
      There is another channel called Serious Keto. He also makes a lot of delicious recipes, which can replace a lot of the recipes you might enjoy with low carb options that dont spike blood sugar.
      My wife reversed her type 2 diabetes doing keto, and I've lost over 80 lbs. Dont fall for this snake oil non-sense.

    I’m sorry, but you have lost me at “fiber is good for your flora, but there is no nutrients from them”. REALLY?!?! I hope you eat your veggies... Oats will never beat the (green) salad nutritional-wise and for the weight loss purpose. I hope people read this, especially if they think they will cure their diabetes by eating oats, cold potato or beans... Also I think it is better to stop completely with high carb food, instead of eating of tempting amounts. It is like to advise a cigarette smoker to stick to 3 a day...
