    Surprisingly, I have found that hummus makes a very good dressing for cold cubed cooked potatoes, as in potato salad. I make my hummus a little thinner than usual using brine from other vegetable ferments as well as standard ingredients. Thank you for this post, it is making me think of new ways to prepare my food.

    Just a note: If you have blood sugar issues, be sure to test each type of resistant starch by testing your blood sugar level before eating the starchy food, 30 minutes after , 1 hour after and 2 hours after. You want to make sure your blood sugar level does not spike over 140 (or more than a 30 point rise)... the lower the blood sugar rise the better. People react differently to different foods, so what works for you may not work for someone else. The reason to check 3 times after eating is that your body might digest the starch quickly or it may take a while. Some people can eat brown rice or oats with little blood sugar rise, for others it spikes up 60-70 points or more within the first 2 hours.

    Adding pumpkin to your overnight oats is a brilliant idea! I can't wait to try it. I've been eating a lot of overnight oats after researching fermented oats and I always add other seeds to them for extra nutrition. If I'm not sure about something like nutritional yeast deny research it before I add it because I don't want anything to interfere with the probiotic benefits.

    When you talk about the benefits of potatoes starches are you including sweet potatoes and or purple potatoes/ purple sweet potatoes in that category?

    I learn in Ayurvedic medicine they consult to eat cold food. Even I my origins is to a similar ethnic culture and we used to do it some way in eating food cold.
    Even I did not know the real sense ( Some times I did not like cold food ) We never used micro waved food and thanks god we are lucky to be blind on hi-tech.
    So Donna, according to your pod cast here my best take is why we eat cold food.
    I have many recipes adapted. My one of the favourites is the RICE SALAD. It is a very sustainable full meal.
    If you eat meat you you can add" cold chicken " into that. Roasted chicken diced . boiled eggs diced apples, nuts, so on so forth. You can add so many optional veggies as artichoke, beetroot, olives raw carrots, celery stalks, Cold potatoes, Chick peas, and mixed Herbal salad is the base. Your dressing could be Mustard vinaigrette ( French dressing) lot of Himalayan/ salt.lemon juice... add some blue cheese crumbs to it will be amazing. This type of a salad in called as a SALADE DE CRUDITÉS. ( Mix salad ) in France. it is closely similar to the famous French.. Salad de Niçoise from Nice . My version is with boiled COLD WHITE RICE. Any long grained with wild rice would be fantastic.
    I am new to Kifer and This id my first month. Im going mix my FRENCH VINAIGRETTE WITH SOME "KEFIR" ( by adding gradually as if you make mayonnaise until the right consistence ) IT WILL GIVE ME a beautiful " Kefir vinaigrette. :-)
