My father said that field rats is clean and fatty in the raining season because they only eat green grass. The best time is when the first rain comes and we should eat them near the place catching them, because in travel the drink water from each others and it affects their meat quality. Can wait to go back to Vietnam and visit my family in the raining season.
Back in 2009 I road tested a rat restaurant for an international reality race tv show I was working for. We had to take the ferry across Thu Thiem I wonder if it's still there! 🐁🐁🐁

To be honest the rat meat never looked good to me....except for this time. It looks exactly like the roasted duck which is one of my favorite foods. This restaurant really knows how to make the weird food looks good and I am sure it tastes good too. I never ate rats but I may after seeing this! too bad they don't have it here. I think it's better if you have some beer with it.
Agree with you on all points, funny you mention beer, when I was editing the vid, I realised I didn't have a beer with it, but having said that, I had about 100km to go to get to Tri Ton, so I thought better of it 😅

Yeah, rats are great dude.I feed my family on them now with the cost of living crisis. We catch most of ours at restaurant skip bins in alley ways off Suhkumvit rd. 11 herbs and spices plus a generous portion of Lao Khao, they go down a treat.

Nope, you got it wrong. “Hai lua” is a combination word which refer to farmers. Kindda like the word “red-neck” in America

Quite close to pork, if you put it in a bánh mì and sold it as bánh mì heo quay, no one would know😅
