RECIPE (without the savory pancake mix ofc)
350g of flour
300ml oil (or sunflower/grapeseed oil)
300g of brown sugar
3 eggs
250g of grated carrots
2 teaspoons of baking powder
1teaspoon baking soda
1 teaspoon of cinnamon powder
2 teaspoons of ginger powder
grated nutmeg
100g of toasted nuts mix(hazelnut, walnut, pecan)
Icing
200ml of whip cream
150g of cream cheese
100g icing sugar
A dash of vanilla extract
zest of half lemon

Gabie, I know you are an amazing chef, but I wanted to share my Aunt Jeanie’s carrot cake secret that she taught my mom. Carrot cake was my dad’ favorite, so she made it all the time. Instead of hand grating the carrot, or even using a food processor, use a blender. Place chunks of peeled carrot in the blender to get a fine grate. You’ll also get some carrot juice, be sure to add it to the batter. It makes the cake so much moister than most carrot cakes.
That's how they make carrot cakes in Brazil and Portugal! It's amazing and easier!

i think it's still a good recipe with blended carrots, but it's also a different one. grated carrots lend their texture to the cake, so you have soft bits of carrot throughout as opposed to something more uniform. and cakes CAN be too moist; having some water bound up in the carrots as opposed to lending all of their moisture to the batter also affects the texture.

Small amounts of savory ingredients in desserts can be great. I make a traditional Italian sweet dessert every year that has parmesan and swiss chard in it. On a completely different note, hang in there. I think you'll be rewarded.

It's a jeon mix. It doesn't contain sugar, but it does contain savory seasonings such as salt and onion powder.
