I've watched dozens of videos on rendering pancetta and ended up ruining it because no one told me that you start with a cold, non-stick pan. I finally figured it out myself. I'm very happy that you specifically pointed out that tip so that others are spared the heartache of seeing their pancetta ruined. Many thanks to you and Uncle Tony.

I lost it when Laura said “don’t scratch my pan” when handing Uncle Tony the tongs 😂 literally me when my husband helps me in the kitchen. I love how she just keeps it real!
YEAH!!!!!! Uncle Tony😀.. Enjoyed every moment of you & Laura again. How did you know carbonara is my favorite dish? I discovered in Rome & fell in love. Hope to see you again sometime😀.. Happy Fathers Day!
It is absolutely delicious and authentic! My family adores your recipes, Laura!!!! I'm making this for the second time. Blessings from Sydney Australia
I love how Uncle Tony is concerned about Joe not eating. He was the same when he was making the pizzas too. The pasta looks delicious. I would love to make this but I know it would scramble the eggs
I’ve been watching Laura for a while what nice video . And uncle Tony looks so proud being next Laura and cooking and teaching us his way cooking. The pizza making video was great . I hope you had a nice vacation thank you uncle tony for taking the time for us and thank you Laura 👍🏻
Infamous quotes by Laura. "You need to plate so I can eat." I was just at my nephew's house yesterday and his wife served this dish. It was delicious! That's why I'm here to get a recipe. Thanks for posting!
Every time you do this with your family it just makes my day! And, even though I don't eat meat, this is hugely helpful, just to learn how to create a great sauce with this technique. Big Hugs!
Uncle Tony seems like a very genuine and friendly person and I suspect an amazing chef! Wondering if he still owns restaurants, would love to visit. Netherlands aren't that far from Italy 🇮🇹
I luv the way chefs cook. My dad was a chef before he passed. I luv going to a fine restaurant and ask the waiter if the chef can make me his special 😁🥰 Chefs love that😄! Wait, did she just say don’t scratch my pan… 😂😂 Laura say u may own restaurants but I own this kitchen 😂😂🤪
He’s definitely doing the Italian cooking dance 🕺 I love it! Can’t wait to make it. Pasta carbonara is my favorite. But I’m wondering how to make a bigger family portion?
In order to make your life easier, it's always best to make pasta dishes in portions; just like Thai noodles! It's easier to control. But obviously this is a headache when we're cooking for a crowd because nowayyyyy am I flipping a pan with 10portions of pasta to reach peak emulsification 😅 This maybe why we never see family meals without anything but a Ragu? Boil a pot sauce and a pot of pasta, mix mix mix and you're done! So I guess, choose your poison?
@@aris1956 I’m going to have to try it soon. It just never appealed to me because of the fatty meat and the egg yolks, but I’ve been hearing so much about it that I must try. Plus my favorite food on the planet is pasta! 🍝
Well Laura, you have all the cute and good looking guys around you as well as they all can cook. Really! I want to be part of you family to be around all of you. Thanks for this video! 😂😂❤
Why don't you use egg whites? I am really curious. I make carbonara probably once a week and I do it almost exactly like in this video, but I use whole eggs, so I am wondering why only yolk? If anyone knows I would appreciate the answer, thank you 😊
I’m patiently waiting for the official recipe to show up on her site but also trying to piece it together from watching and listening to the video repeatedly. I think I got it except for one thing: what do you think is the amount of pasta? A couple of ounces maybe? It’s supposed to be a single portion.

I love your relationship with Uncle Tony and you can tell he's an amazing cook and chef! Thanks so much for sharing his visit with us all, Laura! 🤗💛
To prevent scrambling of the egg yoke … you can temper egg yokes with couple tablespoons of pasta water then add the pasta and mix
This is what I do too!
Like that you are instructing a chef on how to cook

I was always confused why in your cookbook the recipe calls for cream! Lots of speciality European delis have guanciale though!
What if someone doesn't eat pork what can they use? Can I use beef bacon?
