This has been a family recipe for over 50 years now, we usually do this for breakfast, but dinner or lunch is good too. Also, try sauteeing some red and green bell peppers with the onions. With a hot cup of coffee, it's a truly amazing breakfast dish. Lately I have been using Soyrizo for a healthier version ( doctors orders ) 😂

Mexican hash, basically. These tacos are great. I just lay a plate over my bowl in the microwave when I steam. Leftovers are great in scrambled eggs in the morning.
I make these all of the time because of the simplicity and the small amount of ingredients. You just simplified the process by putting the potatoes in the microwave. Thanks for the hint on the potatoes and making everything look so easy.
Crazy. I literally just got finished eating chorizo potato tacos from one of your other videos. Didn’t have tomatillos on hand for the salsa so I used the avocado mayonnaise recipe from frontera website. Delish
I make the same but instead of a taco I put on top of a “sope” the small round tortilla , add crema, queso and green/red salsa. Wohoooo yeah baby delish !
I have made this for breakfast/dinner for years...the only difference for me is I add diced tomato and diced serrano chile in while cooking. Smells great Rick! gina

Very nice dish! But hey Rick, what happened to your Frontera jarred salsas? Can’t find them in our stores. Stores saying that they aren’t receiving deliveries in west suburban Chicago. Help!
This was delicious! My husband loved it as well, but he had to add shredded cheese and sour cream. According to him you can't have tacos without cheese lol. 🙄
You can never go wrong with potatoes and chorizo. Never. One of my favorite breakfasts is a simple chorizo and potato taco.
I appreciate chefs that use microwaves as just one of their tools instead of treating it like some kind of sacrilege.

My husband gets this every morning for breakfast to take to work. He loves it when I scramble eggs in there however, I love them just like this ❤

Yeah, we used to eat it for almuerzo. I had forgotten about it. We usually did eggs and chorizo. I haven't eaten that for years, now.
