Don't limit your interpretation to "powers of rubber", because some of his powers won't fall in any of the categories put on him so far. Huge fan of the channel btw. So his fruit IS a Zoan type but mythical type meaning it has a special property. Zoan devil fruits turn you into "creatures" not necessarily animals. The Gomu Gomu fruit is a Zoan type that turns you into a rubber man and when awakened turns you into SUPER RUBBER MAN

And that is an interesting thought when we already see Luffy in flames with de Red Hawke (and Red Roc). If you stop to think, this explains Luffy stamina and quickly rate of recovery through all series even surpassing the zoan Lucci with a hand to hand body battle. And, for fanbase purposes, explains haw quick he recoverd from Magellan poison or Crocodile's hook trespassing him, and even the high voltage of Enel that would really turns him into grafitte at that millions volts (cause no rubber would support). So, it kind of convenient this way out that Oda choose to "gomu gomu" awakening. Of course it is a way out, a retcon, but very well thought. Kaido deserves his props though. mans fought 3 on 1 for the most part. Then knocked out Luffy like 3 times. All this while still maintaining the island afloat. His power is insane.
Sanji then zoro now luffy. Kaido has been such a fun villain. Dragon is iconic hybrid form scary and his backstory being on rocks pirates crew and his fascination with joyboy is all great. Gear 5 is truly the biggest milestone for luffy so far. Im a manga reader and even in current manga we still know so little about the limitations/functionality of gear 5 nature. Just been a wild arc and im excited for the next island and future events. Final saga starts after wano ends
