if u refrigerate italian meringue frosting overnight will it still remain soft enough to pipe?? so far ive only used american buttercream and a mock swiss buttercream and they both had to be thawed for a few hours before rewhipping and using (any tips would be appreciated!!) :)
I came to the comments to say the same thing. The butter gets more and more melty the longer you leave it out and/or handle it. Put it in the fridge for 30ish min in the piping bag and it will be easier to get details when piping. But it is a softer icing than American buttercream, but also so much better taste and mouthfeel. 😍
I'm so glad I found this video! I got my first set of Russian Piping Tips last month. I made a carrot cake with cream cheese frosting and wanted to do orange flowers, but it just came out a total blob. The frosting was very soft, I now know to chill softer frosting before trying to use the piping tips. Can't wait to try again!

We used Italian icing on the cakes in the bakery I worked at in the UK, but we never added any fats to it. It's light and versatile. Much better for cup cakes, as a huge lump of buttercream can be too heavy and cloying.

Just a tip, If you color your buttercream with white colorant to start with so that there's no yellowish tinge to the buttercream (use the white powdered colorant) then when you add your other colors) That way when you add pink it doesn't turn peachy/orangey, and your blue colorant will not turn green when you add it(due to having a yellow tinge). Mediha Kaya Italian merengue buttercream actually keeps its shape pretty well as long as you let it get stiff first. It pipes like a dream when it’s not too cold or too warm, and if you let it sit in the fridge a bit to stiffen up after piping it, it’ll keep its shape well enough as long as you don’t touch it once it gets back up to room temperature.
