Again, good progress video.
In the intro you could have just added a 12" spacer between the vice dog and the work piece so that the work piece was fully supported by the bench. Nice video :)

Hey - I'm at the same point in my build, and like yours, planning on using wedges to secure the legs. I hadn't planned on bolting down the top as well. I'm curious why you did that? I like the idea of no metal in my bench construction (other than vise hardware), so I'd love to hear your response. Thanks!!
The bolts are low enough in the top that they will never be an issue. I already have magnets embedded, so I’m not as worried about metal. The bolts allow for a secure, tight mount, while still allowing for movement which because of the wedges tenons on the outside will be directed inward where the bolts do the securing.
Looking very nice, but where's all that movement coming from when your levelling them wedges
I don’t really remember why the bench was moving around, but I think I may have had it up on the casters when I cut them flush
