With layer cakes make it the day before and put it in the fridge, covered, overnight. It will strengthen the structure and improve the flavour as all the chocolate and cream cheese will share their flavour in time and taste fantastic. It’s the same principle as soups and casseroles, they always taste better after 24 hours in the fridge.

The sponge will harden and when you decorate it with cream and all the beautiful flowers it won't sag. Decorate it as mentioned above 24 h before and put it in the fridge. I do it all the time.
