Such an inspiration! I follow Nutrition Stripped for about 5 years now and it really helped me eat more plant-based and with more creativity!

Also, when I think of eating a whole plant diet my first thought is this is going to take a lot of time to prepare and club and with a big busy family I don’t have a lot of time.

I love the tip about journaling. Because I have been trying to incorporate the method more and more into my life. I have the pantry, started to do meal plans, and now I’m looking for ways to improve. I think reflecting on the week is a great idea. You mentioned something at the end about finding spices to go together. Is there anything you would suggest for a beginner?

I'm so glad you got that takeaway Leslie! I'm a big fan of journaling, both from my personal and professional experience. Reflection gives you awareness so you can take the right action

Definitely my husband and daughters... I spend so much time trying to make healthy meals but they won't touch half of it... vegetables and lentils f.i. Really frustrating

I hear you on that. It can be so challenging to get others on board.
One great way to sneak in a variety of fruits and veggies is smoothies - especially kid-friendly! Here's a link to a few recipes: nutritionstripped.com/healthy-smoothies-recipes/

I don’t know what to buy or how to cook it, outside of just having a plain steamed vegetable with dinner. It seems like the produce I buy goes bad before I can use it and I need a better plan. I also need foods that my picky family will eat.

My problem as a vegan is processed foods. I’d like to drift away but their so convenient.

It's so great that you have awareness around this. How can you make whole-food sources more convenient for yourself?
For example, I batch cook different components on the weekends, like chickpea burgers, quinoa, tempeh, and veggies so during the week, every meal takes me 15 minutes or less to throw together! (You can see my process here! nutritionstripped.com/healthy-easy-meals/)
I also make my own freezer meals so those weeks that I'm super busy (plus that's a great way to prevent food waste!)
Do a little exploration for yourself - when do you find yourself reaching for those processed options and how can you make whole-food sources more convenient?
