Daily special is not the last ditch effort to reuse the leftovers its actually the only dish that is cooked on that very day, and rest are all par frozen and par cooked. The only way restaurants utilise leftovers when they have weekend buffets. Always go for daily specials.
I love mussels, but I have gotten sick several times ordering them in restaurants. The problem is that when served, I can see if a couple have not opened and avoid them. But I cannot be certain they were properly inspected for already open shells before cooking. Those specific mussels are already dead and will likely cause sickness.
I don't have an allergy problem at most restaurants as my allergy is raw egg so anything containing Mayonnaise is off the menu but I'm on a no added salt or salt substitute diet, getting chefs to not add salt has caused Gordon Ramsey style shouting from the kitchen many times as so many dishes are pre made and reheated in a water bath.
I'd rather eat fish that has been frozen immediately while still fresh, than try to eat stinky, strong smelling fish that has been aging since it was caught.

Fish in most cases has to be frozen immediately if it is not going to be eaten immediately so there is no choice but to freeze them.
