    Good afternoon! I'm not about to try to beat this challenge, but I want to thank you guys for the hours upon hours of entertainment and knowledge you've given me. I actually learned how to make sushi with all your videos, although the furthest I've explored with that is the spicy tuna roll. Thank you guys again, hope you and everyone else has a great month!

    Hello Hiro, I admire your abilities! My sushi making is quite slow. For many years I observed "Teddy", the owner and sushi chef at Yoshi's Restaurant near Hoosick Falls, NY. Teddy was good friends with my parents. He helped me with my knife work and taught me how to make sushi rice. Teddy even took me up on the purveyors seafood truck to teach me how to choose fresh seafood. This was way beck in the 1970's, long before sushi became so popular all over the US.

    Man! The pressure in sushi bar is awesome. Was my favorite spot in the restaurant I worked in and loved that the manager trained me! I don’t think I could beat this but I’d love to try to get better and see what I can accomplish one day!

    I did that when I was working at Pei Wei, but we didn’t have a shaker for the sesame seeds, and we had to use a measuring scoop for the rice on a big sheet of nori

    Good Morning and Happy Bunny Day!
    Yes, "Teddy"/Teuro was trained in Japan. He moved here sometime in the 1960s. Such a kind person!!!My parents loved Japanese food and met "Teddy" when he was a chef at a restaurant. Over several years my Mom encouraged him to open his own restaurant, and he did, which was located right up the road from where my parents lived. Needless to say, my family and I were often there.
    Thank you for all your fantastic videos!

    Chef Hiro started slow with avg 50 sec per roll but the second last took him 44 sec and the last one took him 36 sec....so in theory his best could be around 6-7min

    Is the challenge to do it one at a time? Because if not…then 10 rice balls, use to get ten sheets of Nori. Put all avo, crab stick in then roll without the wrap on the Matt. Cut them all them plate? Cuts the time in half.
    But still love the content would love to try this challenge for fun😁

    I could have done well in this challenge... If I were able to wear gloves anyway. I just can't operate without. Got too used to it during covid. I can pretty easily bang out 14 in 20 minutes. Though we use a crab mix and i typically cut full sheets in half after ricing. Makes it easier to bang em out in bulk on Cali Tuesday.

      I'm subscribed to your channel. Your very artistic, I'm a sushi chef also. I believe you can beat this time. No cuke makes it alot easier. Plus you could just freehand it then tighten them all at the same time with the makisu. Using the maki su for each roll individually slows you down. In a busy sushi bar you have to pre make california rolls esp. if you dont have much help. Chef Hiro is awesome but you got this I already know. The fastest chefs I ever seen make california rolls were in a super busy buffet and they made them all perfect, rainbow rolls too, I know cause I worked in one before. But never again it sucks bad mass production on a line.

    He shaves off 3-4 second per roll when he started to grab all 3 avocado slices at once rather than reaching over multiple times. That one action alone could shave off 30 seconds without going any faster on the rolls themselves

    I think I can... I used to work for a sushi catering company and every morning I have 3 hrs to make 250 of that and on top of that 150 futomaki and 150 inari sushi cut and put together well it was myself and another person but I’ll do this

    Man this challenge sure brings back memories, of when I used to work in a Japanese restaurant and had to make 120 California rolls in an hour before service begins.

      So, that restaurant didn't serve it made to order. Just sat there until someone ordered lol fresh is key when making sushi and maki rolls

      @@dragon-nutz California rolls had to be pre-made 30 minutes before lunch hour. Once the lunch hour rush gets in, all rolls would be gone. However, all the other rolls on the menu are freshly made. California rolls are the restaurant's most popular rolls because it's part of the 6 different bento boxes combos.

    You can save time by not using the bamboo to roll them. i roll em by hand its way faster then shape them.

    I learned to make some sushi from Hiro. I make it for me and my girlfriend every now and then. Depending on the source of the fish, it taste really good :)
    But there is nooooo way I could ever think to win this xD
