- INGREDIENTS:
1 sheep liver
sheep fat
cherry tomatoes
shallots or small onions peeled
salt and pepper
INSTRUCTIONS:
Cut the liver and fat into 2-inch pieces. Skewer, alternating between the liver, fat, tomato, and shallots. Make sure to put fat next to each piece of the liver as the liver doesn’t have fat on it and the fat will help it get crispy on the grill, plus grilled sheep fat is delicious. Grill until golden and cooked through. Season with salt and pepper. Serve with flatbread, salad, yogurt, and hot sauce.
