Bourbon Buffalo Wings Using the Vortex on the Weber Kettle!!!

- Welcome to Little Pig Barbeque! This video is all about chicken wings! I was really feeling some good smoked wings with a nice crispy bite through skin, so I fired up the Weber to get the job done. Wings cooked on the kettle are really good, but to take them to the next level I set the Weber up with the Vortex accessory.
The Vortex makes the grill get HOT, but provides a good area around it for some indirect heat. This set up is absolutely perfect for wing cooking. Throw on a chunk of your favorite wood in the center of the Vortex and you have a wing cooking machine! I promise you, these wings will be better than any wings from a restaurant.
Bourbon Buffalo Sauce Recipe:
- 1/4 Cup of Bourbon Whiskey (I used Evan Williams black label)
- 1/4 Cup brown sugar
- 1/3 Cup ketchup
- 1 tablespoon white vinegar
- 1 tablespoon hot sauce (I used Franks Red Hot Sauce)
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon honey
- 2 tablespoon butter

Really liked the sauce . Grilled the wings for 30 minutes , turned them , another 30 . Had a vortex . Burned them pretty bad . Never done wings before . In Houston , was 90 degrees outside , the temp in the Weber kettle was 600 . Think I should have pulled them in 25 minutes . Will try again soon
It’s all about trial and error! Keep at it and glad you enjoyed the sauce!
2nd times the charm. 2 things : The wings were much dryer this time , and I took them off after 40 minutes . The temp on the wings were 200 , Could have taken them off at 30 minutes I bet . But they were good !!
Wings are very forgiving. I’ve taken some off at 210 before and they were still on point.
An hour seems a bit much IMO. There is no way I would not burn them to a crisp The wings do look amazing man.

It sure is! Anything chicken related it’s awesome. Cooks a great steak as well because of the ability for a VERY high sear. Then you have a cooler side to move the meat to.

Great video, beautiful wings! I have not heard of the vortex before and I just put the wings on direct heat and got great crispy wings and no flare ups. What is the advantage of the vortex? By the way I have a 1964 Weber kettle grill I found at an estate sale in pretty much new condition.
Vortex mainly just keeps the heat concentrated in the center. It puts out great food but honestly there are other techniques that gives the same results.

Give it a try! You can use any bourbon, but Evan Williams is a cheaper one to cook with. Makes a great sauce either way! Hope your a subscriber man!
Is it best to remove that centerpiece on the grill or leave it on?
Honestly, it doesn't make a difference. I like to leave it in and just put my wood chunk directly on the grate.
Same kettle, same vortex. My wings hit 200 degrees internal after just 30 min.
That's fast! Mine cooks a little faster evert now and then. I think alot of depends on how many coals are lit in the vortex. I rarely measure, I just dump and light. I always say, cook to temp and not time!
What brand of hot sauce is in your sauce?
I dont remember for this particular video, but I can tell you it would be either Frank's Red Hot, Cholula Original or Crystal. That's mainly all I buy!
190 on chicken? Way overdone.
Normally I would agree with you for chicken, but wings are very forgiving. They will be super juicy and fall off the bone tender. Also, the skin will get crispy. Give it a try.
