What You’ll Need:
Heavy whipping cream
Salt (optional, to taste)
Ice water
A stand mixer, hand mixer, or food processor
A bowl
Instructions:
1. Start with Heavy Whipping Cream:
Pour the heavy whipping cream into the bowl of a stand mixer or food processor. If you're using a hand mixer, just use a large mixing bowl.
Let the cream sit at room temperature for about 10 minutes to help it whip faster.
2. Whip the Cream:
Begin mixing at a medium speed. As you mix, the cream will first turn into whipped cream. Keep mixing, and soon it will start to separate into butter and buttermilk.
This process usually takes around 4-5 minutes, depending on the speed and the amount of cream you're using.
3. Separate the Butter from the Buttermilk:
Once the cream has separated, you’ll see clumps of butter forming, and there will be a cloudy liquid (buttermilk) in the bowl.
Carefully pour off the buttermilk into another container. You can save this for baking or cooking (it’s great for pancakes or biscuits!).
4. Wash the Butter:
To remove excess buttermilk and make the butter last longer, you need to wash it. Put the butter back into the bowl and add cold ice water (about a cup or so). Mix gently.
Use a spatula or spoon to knead the butter in the water, then drain off the liquid. Repeat this process until the water runs clear.
5. Add Salt (Optional):
If you like salted butter, add a pinch of salt to taste. Mix it in thoroughly.
6. Shape and Store:
Once your butter is washed and salted to your liking, transfer it to a container or shape it into a block using wax paper or parchment paper.
Store the homemade butter in the refrigerator for up to a week or freeze it for longer storage.
Tips:
You can use a hand whisk, but it will take much longer and require more effort.
If you prefer flavored butter, you can mix in herbs, garlic, or other spices after the butter has been made.
The buttermilk left behind can be used in baking recipes like scones or pancakes.
