I passed your recipe to my teenage daughter for her 1st time baking. She doubled the portion, and we had 3 pumpkin cakes. The texture was moist and turned out very well, with the cream cheese icing on the top. Yummy 😋
Why is there baking soda in the dough? I always thought baking soda needs to react with acid, but there's no buttermilk, sour cream or yoghurt, not even lemon in the dough. 🤔
Bicarbonate needs acid while baking soda doesn’t as it already contains acid. You can replace baking soda with bicarbonate (2 tbs baking soda = 1 tbs bicarbonate) but if you do, you need to add acid.

There's baking powder without an acid in here, was curious about the same thing. Must've turned out ok🎏
One third cup of pumpkin in a pumpkin cake is a waste of time🙄
