As a random AoE4 Byzantine main on the internet, after hearing your friends' opinions on the Byzantine horsemen I think you need to find better friends. On the topic of "What about cataphracts?", you're going to need a food-dump if you're trying to build up your olive oil supplies for mercenaries. So making big groups of horsemen to just throw at your opponents economy is basically free. You don't send in Cataphracts to harass you send them in to win the game. Byzantine Horsemen are the sexiest free unit, not to mention they'll help pay for your Cataphracts later down the line. And the capes are 10/10. All that said, that's not the best angle in the picture here.
A note about turbans on helmets and turban helmets, which despite sounding like the same thing aren't. It's very popular in the modern day to depict turbans worn on helmets for middle eastern troops although in history we do not see this done a lot. The vast majority of sources across pretty much all time periods show helmets worn without turbans on them, so I'd say it's more of a trope than anything (even if it was done occasionally). Turban Helmets on the other hand is the modern name given to a specific type of helmet, not because they were worn with turbans on top but rather because their swirly designs are thought to be made intentionally to mimic the pattern of turbans. The design is associated primarily with Turkmen from the persian Aq-Qoyunlu empire and also the Shirvan, although the Ottomans of course due to warring with both of these cultures adopted the helmets as well a little bit, primarily as war loot but also probably some domestically made designs (we know after all that the ottomans did import persian armourers and emulated armour from them). The origins of the Turban helmet are interesting since they seem to be a mix of two primary influences; helmets found from the Caucasus and turco-mongol ones such as the chichak. The caucasian helmets have a few surviving analogues such as the Wawel Helmet which is thought to be Georgian, these 14th century helmets have rounded dome tops and not the pointy ones that the turco-persian Turban Helmets have in the late 15th and 16th centuries. However large parts of the caucasus were controlled by various turco-mongol and persian powers and this design spread into Persia from there, which later became the pointy-topped turban helmets. A helmet in the earlier caucasian manner but which already has begun to have persianate influences also survives from the 14th century Blue Horde. The writing on it attributes it to Jani Beg, a mid-14th century Golden Horde khan. It's pretty much the only helmet that we have surviving that can directly be tied to a Mongol ruler which is pretty cool (and also gives a pretty reliable dating for it). It was also found in Tibet which also is pretty cool and serves to show how far cultural influence can spread.

Mainly mentioned to be done by arabs, but some art shows occasional examples on persians, mughals and ottomans too. Most art still shows without, but I shouldn't make it sound like it's definitely not a thing. Just a lot more uncommon than the trope would like to show.

From what I read the modern perception of the Takeda Clan's cavalry has been "mythologized" through legend. Historical evidence (based on records of their troop supply) suggests that the Takeda did not field more cavalry than their neighbors, and also did not field any Eurasian-style heavy cavalry. They just made a name for themselves in their battles and it became a really nice story that got embellished more and more over the years. Open to reading more though.
