The Job case came about because of the invention of Linotype and Monotype. Large numbers of pages of type no longer needed to be set by hand! The jobbing case was used for corrections and display setting. Used both in my 30 years or so as a compositor in the UK.
It's because when you use what is essentially a stamp you're going to get a mirrored image on the paper. If the text stamps weren't mirrored then the print would end up backwards on the paper
This video is full of errors, starting with "depending on the font" and "letter by letter, and you also had to do it backwards" these statements are stercoraceous at best.

It's a mirrored image, of course the letter stamps had to be backwards. Otherwise what you print onto the paper would be backwards.
