Are Sprouted Grains Really Healthy?

    In today’s video, we will be discussing the subject of sprouted grains and if they are really healthy. I’ll cut right to the chase. My answer is: sometimes and in moderation.
    There are three reasons sprouted grains are better than regular grains:
    1. Phytic acid is in regular grains, which is an enzyme inhibitor. (If you soak the grains, the sprouted grains unlock the nutrients that your body can absorb.)
    2. Gluten in protein becomes more digestible.
    3. Regular grains are high in carbohydrates, specifically a type of carbohydrate called amylopectin. Amylopectin affects blood sugar levels and can increase your risk of diabetes.
    Overall, sprouted grains are the better option, but it’s still not perfect or what I would consider a healing food. If you’re struggling with an autoimmune disease, removing grains for a while would allow your body to heal. In general, if you can limit your intake of grains to just a couple of times of week, in moderation, you will be consuming a healthy diet.

    When making bread, all grains go through that soaking process when the bread is set to rise (twice in many cases). One thing about sprouted bread is that not only are you not eating dead grain (sprouted grains are alive when they are sprouted), once the grain is sprouted it becomes a plant. So you are not eating grain, you are eating plants, and the difference is huge when it comes to the glycemic scale. Once a grain sprouts the protein increases and the carbohydrate levels in that grain drop dramatically.

      @@sixpackbinky sprouted grains do still raise blood glucose, but the Ezekiel sprouted bread bag says that it has a lower glycemic index rating - meaning it wont raise blood glucose as much as regular bread/flour.

    About 8 months ago I started eating organic sprouted grain bread, the main benefit I got I started to have great bowel movement since the bread is high in fibre, and I actually lost weight. Unfortunately I am overseas on an island in the Philippines, where it's challenging to get higher quality bread. I have a local baker who makes his bread, but I can tell it's not the same as sprouted bread.

    I've baked all of my own bread for decades, however, over the past few months, I've been purchasing wheat berries, ancient mostly, to grind my own flour. I first started hearing about the health benefits of sprouted grains and I plan to sprout grains prior to baking bread, hopefully, for most, if not all of my breads.

    soaking will only remove a portion of phytic acid depending on the grain. usually it will remove 40-60%. sprouting/fermenting will remove almost all of it

      fermentation is another step you do after sprouting. it is usually done using a culture of yeast or apple cider vinegar with the mother. just look up a tutorial depending on what you want to sprout and ferment.

      @@erikmoten8302 How about fermented sprouted grains? Step one, soak and sprout (1/16'' to 1/8'' sprouts). Step two: dry the grains, which also kills the grains, but, apparently the enzymes are still pretty well intact. Step three, ferment the dried sprouted grains in 'just enough' water to keep the dried sprouted grains soaked (and they will re-hydrate, but not likely to regrow, but if they do, same guideline applies, 1/16'' to 1/8'' sprout growth maximum. Step four, when sufficiently fermented (personal choice), cook the fermented sprouts.
      Fermentation is just done by wild souring,… same as with sauerkraut, except water is added to the grains for the fermenting time.

    Good info man. I'm currently recovering from CFS and have removed grains. I must admit though, I did lol and spit out a mouthful of tea when you said " once your digestive system has been destroyed" by accident!

    Very informative and useful. I started your technique and hopefully I will get a slim waistline. I have a question about diet as well. Lot of people say sprouted foods are good, the germination will take away Phytic acid. Does using a pressure cooking method take away the Phytic acid issue? What impact does pressure cooking have on Amelopectin in the grains. thank you very much.

    My son age 13 years old, is pre-diabetes is started consuming sprouted Fenugreek daily morning in on enmpty stomach for the past 15 days, now he started to have some allergies over skin baciside of his body and buffs near the eye and one or two plums over the face..does it seems due to the effect of that Fenugreek

      All grains and seeds are healthier sprouted as per the nature and purpose of a grain or seed in the life cycle of a plant. Just dont eat kidney bean sprouts

    The problem is I couldn't digest on a gaps diet, so I need some grains in my diet. Sprouted grains are better. No lectins. Are lectins also phytic acid?

    If you seperate the hours that you consume phytic acid, for example eating foods without phytic acid in the morning, and foods with phytic acid at least 8 hours later, will this help absorption?

    Sprouted oats have less phytic acid than regular oats. Then you should still soak the sprouted oats and drain the water. Then ferment the sprouted oats with kefir.

    hello. Where can we get the study you mentioned about 80% of iron and magnesium from whole grains is lot because of a lack of sprouting?? I would really like to see that. thanks

      Has to do with bioavailability of those nutrients at different stages of the seed or grain. Lots of info and studies out there

    I have heard on TH-cam that if you put your bread in the freezer and then toast it, that lowers the spike in blood sugar substantially. So, I make my own sourdough sprouted spelt bread and then I slice it and freeze it.

    Hello, a question then. Given that many mass cultures, including India and China have survived thousands of years on and revere rice (grain) how does that fit into your information regarding sprouted and non sprouted grains. Are you talking about only North American grown gains or are they any different from Asian grains?

      In India, we never eat grain without soaking them. Rice, lentils, beans etc are all soaked before being cooked

      The quantity of rice consumed has probably become too much in the modern times. People might have eaten less of rice and more of healthier vegetables, other proteins and fermented foods in the ancient days. Also fasting used to be part of normal life for many to detox the system and keep it well balanced. Modern food has become very taste oriented and less healthy. White rice might have less phytate than brown rice too, but less in over all nutritional value as well.

    Could the people that are starving, like in Venezuela grow sprouts as a way to escape hunger?, or anywhere in the world...if they could afford the seeds? Would they quickly tire of eating sprouts? or would it be a viable option?

      The oldest verified/documented person (so far) was Jeanne Calmont from France, who lived to 122 years.
      No one even near 300. Since you state the age was documented , please provide the source.

      Sourdough process uses bacteria, so this would also aid in digestion and improving the gut biome.

    Just caz something is low on sugars or fat
    Does not mean it reduces your already present blood sugars or fats
    But since its low on sugars and fats less of them enter your blood
    So if your blood sugar levels are high eating something low on sugar ( sprouts , vinegar , biter foods )
    Wont decrease you blood sugar levels

      hi you can eat oatmeal and oatbran is gluten free and the healthiest choice in cereals just make sure to avoid buying those dried fruit oats or those quick cooking oats from quacker and those things in general if you wanna improve your acne even eliminate it avoid dairy and animal products animal meat contain a compound thay causes those oily pimples we get all the time same with dairy products and start eating more green vegetables and fruits and avoid sugar number one thing avoid sugar processed withe sugar try honey instead healthier option or some fruit thay contains natural fructose and glucose plus they are very beneficial for the skin as they contain vitamins that help with skin alot. hope i helped :)

      ryebread1980 I believe they're healthier. Each does have quite a bit of starch but definitely better than most foods. On the Gerson diet they eat oatmeal in the morning with a Tbsp or so of raw honey or unprocessed sugar so it can't be all bad if it's part of a diet that cures cancer.

      +bingochoice i'm no Dr. but i have heard this before, so i am only repeating the information. Sourdough bread is a fermented food that contains live bacteria like sauerkraut, kombucha tea and yogurt. Fermented foods are suppose to improving digestion, gut health and general nutrition.

      +bingochoice Sourdough fermentation, like sprouting, helps with the bioavailability of nutrients in grains. However, if you make it with white flour, it's still not particularly good for you. Whole grain sourdough is much better, particularly sourdough whole rye (a particularly healthy grain!) As for the probiotics mentioned by DoNothingChecks, the beneficial bacteria do not survive the baking.

      I make sourdough bread. I proof mine in the refrigerator for 18 hours and another proofing of 5-6 hours on counter. Does it remove the lectins. Lectins may be the real culprit making people sick.

    Your first example of food from grains is with bread. I eat BROL (Dr Greger recipe), try it. I soak it overnight. I don’t sprout or soak nuts and seeds because science. I wish this guy backed up his claims with evidence. You know, scientific studies.

    I am a vegan + milk + yogurt. So if I steam or cook sprouted grains and consume in place of meat , for protein purpose, is it healthy ? I eat this with rice. Can you please let me know nutritional value of steaming the sprouted grains.

      A vegan does not consume dairy milk and yogurt. The definition of vegan is eating no foods that come from animals. Dairy Milk and yogurt are both animal products. You can now find dairy alternatives like coconut, almond or cashew milk in stores and you can also find non dairy yogurts if you want to get rid of all animals products.

    Best diet eaten by Scott Nearing in book The Good Life. Fruit for breakfast, veg soup and whole grains for lunch, veg salad and baked veg for dinner. Lived to age 100 but bed ridden at age 95. Good news, you are living to be old. Bad news you are living to be old.

      Porrige is great, now go on low fat whole food plant based diet for few years and you might see a difference. Ceylon cinnamon won't help you with diabetes though, only regular cinnamon helps regulate blood sugar but it's toxic for the liver.

    How can you have that entire conversation without mentioning Phytase and lactobacilli? Humans make a small amount of the phytase enzyme and our processes destroy the phytase in the seeds --- So supplement your phytase and add lactobacilli to add more phytase and ferment and sour so that phytase is present in the food --- the phosphoous based acid can rot your teeth and it blocks absoprtion and disrupts metabolism of magnesium, zinc, and iron --- its a friggin monster --- gluten is not the problem lack of phytase is -- so we either eat it right or do not eat it unless you are supplementing. Phytic acid can rot your teeth in a week--so how bad do you think it is to the rest of your system . Our enzymes are compromised hugely by large amounts of inflammation and fibrin -- so eating incorrectly is literally making a mountain out of a mole hill in an ever accelerating fashion -- self-destruction ..... step it up Dr. Axe you are doing good work... I am a fan but add some MAGNITUDE to your delivery. Our enzyme production drops off huge at 27 years and then inflammation ever increasingly dominates our limited resource of enzymes -- Help!!!!

      Phytase enzyme from food will 100% get destroyed in your stomach acid ( source class 8 biology food ) the stomach acid is made to destroy protein there is no way phytase is surviving that

      8 to 12 hours. The funny thing is that quinoa usually sprout also in the soaking part.

    What is your opinion about sprouted brown rice for someone with Lyme disease who has already cut out all grains from their diet (all i eat is sprouts, veggies, some fruit, eggs, meat) ?
    Would you still not recommend that, too high carbohydrate content ? or is it different in your opinion? Does the nutritional benefits of sprouted brown rice overcome the carbohydrate related issues ?

    Dr axe. If your on a gluten free diet. Is buckwheat, millet, barley, spelt, rye, wheat berries. Are all of these okay to eat?
