    Hi John, I came across your videos by chance and very glad I did. I have tried to make bread in the past, with results poor at best to disaster at worst, so I gave up. After not being able to get a good loaf, I thought I would give it one last try. I found your video and gave it a try, and wow. It is not perfect, but still the best loaf I have made and still way better than any supermarket rubbish. I need to work on the knocking back, but that will come with practice. Thank you for your videos and will now be trying out others from your website.

    I've made this three times now and each time it has been wonderful. I'm very confident now I can make bread. It's very important the yeast is working, I messed up with the baguettes and used yeast which was dead. The yeast was in an open packet, my recommendation would be to use the sachets as they stay sealed as I had both and they had the same expiry date but the sachets are still "alive". John is a great teacher and I'm looking forward to trying his other recipes. Thanks John, Fraser

      I buy 500g packets of yeast which I transfer directly to an airtight container and refrigerate. I also chill all my flours, especially whole wheat otherwise bugs appear by magic.

    I am 26 and I absolutely adore your videos. Your tone of voice is claming and soothing, and the choice of music perfect. All together it makes for a wonderful relaxing combination, much more pleasant than the modern food bloggers' fast paced and hectic videos.

    I've made this loaf several times and it was great. Decided to try reducing the yeast to 1/4 tsp and letting it ferment overnight, then knocked it back, shaped and let it rise again in the loaf pan. Slightly smaller loaf, but the flavor was awesome! Thanks for the starting recipe. I love the detailed tutorials and recipes for bread making.

    Thank you so much for this. My dad was a Master baker and this is the first loaf he ever taught me to make when I was 8 and he thought I should be knowing these things. Still tastes as good as it ever did and thank you for the memories. It’s just a fabulous basic recipe.

    Just made this bread today. And honestly the best bread I have made. Another gem and thanks John. Easy to follow instructions and 100% success. Like everything I’ve tried to date. My wife can’t believe I’m so into the cooking lately. But with johns guidance I seem to not go wrong. I bless the day I found this channel Altho very late but I have time …..and I’ve got the 3 John recipe books coming for Xmas. That’s how impressed my other half is with my results and that says it all. Well done sir John. On to my next video soon. God bless you John.     Bliss. I took one of this recipe out of the oven 1 hour ago, and it's delicious. I will make this for our sandwiches now. Followed the recipe exactly, and it's better to weigh the ingredients. I tried another no knead recipe 3x, loose measuring, 8-24 hour rise, wasn't for me. I'm so happy, no more wasted ingredients,
    and wonderful, fresh bread at the end of very little work. Bravo, John, and cheers.

    I tried this bread recipe last week and after a couple obstacles it turned out very good. It did not work at first; as I did not have the right kind of yeast which would not breakdown and activate in the dough, the bread would bearly rise even after the second proof. I reshaped the dough in a ball, put it in a plastic container with the lid on and after 45 min the dough rise up and double in size. I shape two small breads, proof them again for 40 min and bake them in the oven. They came out nice and tasty. Thank you for this amazing recipe chef John.

    I tried out the recipe John it was delicious. I made the recipe with the kids. They had so much fun. They even made their own bread rolls.

    This recipe/technique made the BEST loaf I've ever tried. It was so freaking soft and delicious and it was the right hieight for a proper loaf.
    I've been using the traditional no-knead method, and have always been disappointed that it always turned out flat. It tasted good, but it simply didn't rise. Not so, this recipe.
    PERFECT!

    OK, I made this yesterday - my daughter tried it and said 'Now that's sandwich bread, Mom.' She loves baking and is rather good at it, so I took that as a compliment. But I find that there is something rather satisfying about kneading dough - so I think your kneaded version of this bread will be next on the list. Thanks John.

    Just made this and came out amazing. I did have to add a tiny bit of water as the dough was bit dry and wouldn’t mix completely. Maybe my environment is low humidity. I’ll work back up to 100% whole wheat but your tips helped with this loaf (mainly use bottled water).

    I do love the way you scrape out the mixing bowls John!! Very important. My Nanny used to be a great pot-scraper. It is a lost art sadly.
    Darling Nigella could get another 3 or 4 cuppie-cakes from every batch of batter if only she followed your good advice!
    But maybe she likes to lick the bowls clean when the cameras aren't rolling.

    This has become my 'go to' loaf of bread. Family loves it. No problems at all - always works the way it was intended. So does the 'kneaded version' for that matter. Thanks, John for making my life easier. No more, 'Oh no, we're out of bread/buns/hot dog rolls/whatever - gotta run to the store'. When we feel like something sweet, one of your cake recipes/treats always hits the spot. Today my eldest son asked 'When can we have that great pizza again - I almost inhaled it last time'. Your recipe. The list goes on.... You must have left behind some very big shoes to fill when you retired.

    Just made this loaf for the second time and it turned out beautifully both times. I bought the Lock and Lock box to keep my home made bread in and so far it is keeping it fresh. My loaf does not seem to rise as much as your but that is not a problem it stall tastes good. To help with the proving I place it into my microwave and put in a ramekin of boiling water to create heat and steam. Have also tried the half and half again it did not rise as much as yours it make be my kneading is not strong enough I may try it on my Kitchen aid to see if it makes any difference. recipes are so easy to follow and foolproof so far.

      The more you practise, the better your results will become Marion. Here are some basic bread making rules to follow. Apologies if you have already read them.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour.       Thank you John. I made the soft white sandwich loaf and it turned out beautifully and rose as well as yours its just the other two recipes that seem to not be as airy. Your drought always looks so much smoother than mine. I will keep persevering as it is so much nicer than commercial bread and I do enjoy the process and of course the lovely smell in the house. Will take all your tips on board and I do weigh everything it is so much easier than trying to use jugs and spoons etc.

    Hello John
    I printed the recipe and made this today. It turned out very well. I also made Sour Dough Bread. You have a typo in the published recipe.
    When there is only 10 minutes lest (LEFT) on the timer preheat your oven to 190°C that’s 375°F or gas mark 5.

    Just made this and it turned out delicious. The only problem is it didn’t rise quite like yours, John. I think the problem was the cold house. It was -5C last night and the door was opened quite a bit.

    John i guess you already know this but i just bought Professional Bakers Bread Flour & Dough Improver it makes a massive difference to the Bread its so much softer and lasts twice as long i use 2g per 100g of flour normally after i make a loaf of bread it goes a little hard after 2-3 days but the improver makes the bread last up to a week

    Another tasty, reliable recipe John. I am attracted to the no knead method as I have arthritic hands, and the bowl of my Kenwood stand mixer cracked in the dishwasher. A replacement bowl is fifty quid ! I'll never buy Kenwood again, and sold the machine. Also, all their appliances use slimine plugs, which me and other oldies can't grip to remove from the (electrical) socket. Sorry to use your channel to moan, but others deserve to be warned.
    Keep up the good work John, everyone of your recipes I've tried works.

    John, I just took my Large White Loaf out of the oven and OMGosh! It's wonderful, so perfect, so delicious! The texture is perfect even though my oven gave me fits trying to stay on 375 degrees! I had to stay with it to stay close to the right temp and in spite of this, this bread turned out to be the best loaf of bread I've EVER made! Can't wait to try your Rye bread, French baguettes and Ciabatta, etc! I'll be giving your bread for Thanksgiving and Christmas gifts this fall. You're brilliant! I'm throwing away my other bread recipes. Blessings! My cookbook will be here soon! :)

    You have no idea how happy I was to find your channel. At last! measurements in grams. Thank you, 50 times over. Most bread recipes I've found are in (US) cups - and that is just guesswork in my book - to put it politely. One thing, the 'strongest' white bread flour I have found where I live is only 11.4 percent protein - seems to work well enough though. Also had to smile at your 'setting oven to 20 deg lower temp' - my oven is the same.

I have been looking for an artisan style loaf, you know the one that uses traditional ingredients and a lovely browned crust. I have tried a couple but no good. Just sat in the sun on a bank holiday eating amazing toast and working out how to build a wall with the other 'bricks' I have using other so called pro chefs recipe's

    I just watched this but I am going to stick to your other (No Knead) recipe today as I am really enjoying it and having fun mastering that French wet kneading method. But, with the fire going, now that it is winter here, I'll be sure to be wanting to bring out my (cast iron) jaffle iron and I'll give this one a try. I learned some more as usual with your excellent productions, and you have answered the question which has been on my mind since doing the Farmhouse no knead loaf: Why knead bread when I can get results like this?!     First time making bread after finding your channel, probably the wrong time as well. It was very hard to find flour in the first place and probably payed over the odds for it.
    All went well and got a proper rise too, but seemed to cook a lot faster than the 30 minutes, had to take it out after about 15/18 minutes, bread still cooling now. will have a taste in the morning

    Thank you so much John. I followed your suggestion, & weighed all the ingredients before I started & straight away hit a problem. The recipe called for 2 teaspoons of yeast ( I used a well known brand here in NZ, Edmonds Sure bake Active Yeast mixture) the weight was 7g, When I went to weigh it, 1 teaspoon of yeast = 7g. Because I had weighed everything else, I just used the 7g. I'm concerned because although The size of the dough did increase, it certainly didn't double. It's just gone in the oven, but it all smells beautiful, but I doubt it will be anywhere near the height of yours. Perhaps I should have ignored the weight & gone with the 2 teaspoons of yeast. I will definitely make a number of your no knead breads, but until I sort out where I've gone wrong, I'll keep trying this one to get it right before I move on to another recipe. Have you any idea where I went wrong, I suspect the yeast quantity is to blame. My tin was the correct size but when I put it into the oven, the dough only came 1/2 way up the tin, not a glorious size like yours. My one & only attempt at bread before failed, but I was told it was my Kneading, I'm too heavy handed to knead bread, but my whole family say my home made pastry is 2nd to none, so I don't know.

      Some extra advice my friend.
      Go through my 4 main bread making rules below, especially 2 and 3.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here th-cam.com/video/HWpSbYV96_c/w-d-xo.html

      @@JohnKirkwoodProFoodHomemade Hi John & Thanks so much for the Quick answer. So, my flour I'm using, is specifically for making Bread, making Fruit Cakes & for use in Bread makers. The Protein in the ingredients is 14.4g. It was a Brand new bag with a use by date of 2024. The yeast is an Active Yeast Mixture. Contents are: Yeast, wheat flour, emulsifiers (472e, 481), flour treatment agent (300), sugar, canola oil, enzymes.
      I weighed everything on digital Scales. The yeast you had listed was 2 teaspoons of yeast being 2tea spoons which was 7g. However, I put a small dish on the scales & zeroed it, then put 1 teaspoon of the yeast mix in the dish & that went straight to 7g. seeing that I weighed out everything, I stayed with just the 1 teaspoon that weighed 7g. This I think maybe the problem, your pure yeast takes 2 teaspoons to weigh 7g, but with my yeast mix it only took 1 teaspoon to make 7g. I followed all your Instructions, to the letter, even using a baking thermometer to ensure the temp. of the water was correct. After the first raise, it did rise but did not double, only rose about 1/4, I knocked it back & it was nice & smooth like yours was in the video. The 2nd rise was only about 1/4, not anywhere near your rise. I knocked it back again & shaped it into the oval shape & put it to the tin (well greased with lard) for the final rise. It did rise but only approx. 1/2 way up the tin. When it was ready, it barley reached the top of the tin. It tasted beautiful & the texture was right, it just didn't rise high enough. My husband ate all but 1 slice. I'm thinking next time I will use the 2 teaspoons rather than just the weight, as there are extra things in the yeast which I think made the actual weight of the yeast heavier than just the yeast would be. I'm sorry for banging on but there are so many of your Bread recipes I want to make & my husband (a Brum) said this was the first bread he'd had here in NZ that tasted like the English Bread, I just have to get it right.

I went with 2 teaspoons of yeast mix rather than the 7g because of all the extra things in it & that did the trick perfectly, it looked & tasted wonderful. This is the first of many, I'll keep this as my everyday recipe & make 2 a day. I had to stand guard over this first one with a meat tenderiser! The whole lot went over an hour. Thank you, thank you, thank you so very much. You my friend are most definitely the Man!!!

      All I can say Alastair, is that the recipe is correct, if you haven't already, go through my 4 main breading making rules below, especially 2 and 3, and see if you can identify anything obvious, that's going wrong, I suspect No2, either wrong measurements or it's your water, all explained below.

    Omg 😲 that bread looks beautiful.Some people like chocolate etc,not me homemade bread n butter,oh n a piece of cheese 🧀 a cup a coffee & that’s perfection.Bread is my downfall lol I must try to do this,making bread has always scared me a little.Oh I would definitely have mine a bit darker,I always choose the burnt ones on the market 😬👏🏻x
