Thanks for this video. I don’t think the instructions on the Speedi are clear enough about what the difference is, and this is so much needed help. The difference between the steam and crisp setting, and the Speedi meals setting is subtle, but do use them differently. I use the speedy meals setting when I am cooking two different dishes at once, with the crisper plate in the upper position. When I use the steam and crisp function, I am usually only cooking one dish that I want steamed to cook and then crisped up. I put one or two cups of water in the bottom of the pot and the crisping plate in the lower position. That keeps the protein away from the upper heating element and prevents it from over cooking. That’s how I do whole chickens, or anything of that sort.
Hi CinSu. What would happen if you used steam/crisp on a 2 layer meal? I’m asking because I’m thinking about buying the smart lid pressure cooker which only has steam/crisp (not speedi meal). But, it appears I could accomplish the 2 layer speedi meals with the smart lid…but also get the benefit of the pressure cooker. Any thoughts would be appreciated.
@@bryancloar5760 Yes, the Speedi does 2 layer meals beautifully. A friend has the smart lid, and it does everything the Speedi does plus pressure cooking. But even so, since I already have a pressure cooker, I prefer the Speedi. Frankly, while the Speedi doesn’t cook as fast as a pressure cooker, it still cooks very fast.

I don't slow cook because I'm afraid to leave any appliances plugged in and cooking if I'm not home, and, I can obtain the same taste using a pressure cooker in no time at all. This appeals to me for roasting a chicken, or grilling chicken thighs and I'd like to try baking in it as well. I don't own any Ninja appliances, my appliances are mostly Breville. Ninja seems to have a lot of good reviews, so I think I'll start with the Speedi, because of its versatility. Your video is quite helpful, thank you.

Hi James, do you always need to put water to bottom when using the steam/bake option? To me logically the answer is yes cause it still involves steaming however the Ninja speedi instruction just says to put the tray to the bottom and add your ingredients.
Thanks for the tutorial, very informative. I’m partially sited so it saved me poring over the manual for ages. Living in England there a few differences but nothing insurmountable. The major difference is temperature. We use Centigrade versus Fahrenheit. Then just things like grill and no proofing. I make bread in a machine so it’s not important. Thank you

Ty so much for this. I'm literally the guy who everyone hates for me to put things together or use things because I refuse to do so without reading all of the instructions first. This time I didn't. I've cooked about 6 things. All good but clearly not perfect because I don't understand the settings or know which ones to pick. You explained it perfectly and now I see where I have used the wrong settings a few times
James, you can sous vide your food in a zip lock baggie. It is not necessary to have a vacuum sealer. When using the baggie you get the air out of the baggie by water displacement method and zip it closed. I only use baggies when I sous vide and I cook with this method many days a week. Then I reverse seared when the meat is done
Yeah, you can use regular ziplock baggies. I use the freezer ones because they are more durable. I also use my vacuum machine and honestly both methods work. I only prefer to use my Anova Sous Vide machine when I am doing Sous Vide cooking. It is nice they add Sous Vide features onto many machines for people to try Sous Vide cooking.
I’ve done that method too and it works. I had an instant pot Sous Vide immersion circulator and an Anova one a few years ago. They both stopped working so I bought another one. I used Fairlife milk and a few tablespoons yogurt to make a quart of yogurt. Because it was ultra processed the milk did not have to be heated first. You mix the yogurt and milk together and set the machine.

I have a question though about does any of those pressure cookers do have a grilling function? I am really in a big dilemma with which one I would buy. Pressure cooker or Nina Foodi grill? Bought this 2 weeks ago and I am really pleased with the various functions, especially speedi meals. One thing I am looking to do is to cook a cheese omelette in it. I do have a dedicated omelette maker but it is getting a bit old now and wonder if I can use the Speedi to cook a cheese omellet. I normally use sweet peppers and tomatoes with it. Any ideas on how to cok this with the speedi?

Quick question, if I want to quick cook some breaded chicken escalopes with oven fries, could I use either the steam/bake or steam/crisp settings to cook both at once, or should I stick with the air fryer function? I followed another You Tuber who did this on steam/bake, with fries in the bottom (with a bit of spray oil) and chicken on top, and it came out great- not too dry or overcooked like it might have been on airfry mode. But I’m worried that this might destroy the lower heating element because there was no liquid in the bottom. Am I okay to use this method without water?

I have watched this twice now and have a quick question if you wouldnt mind, we eat salmon on a regular basis, with home made honey and garlic marinade. Hi James, thank you for this video. My speedi keeps telling me to ‘add pot’ even though the pot is in situ! I have checked the bottom element and the centre piece, and there seems to be no obstruction there. Any advice? I only have the speedi less than 12 months.

I did but I was just wondering if I could baste chicken with Wesson Oil and flour it like you would to fry chicken on a stove top? Because I would like to try it tonight.I was just watching your video and following the instructions to wash pan, pot, tray etc. and burn of any oil left in the inside of the unit.
@@blackjew725 you can do exactly what you do on the stove top, you just have to think of it as a compact stove top on the left settings, and a small oven with the settings on the right, with a bit of a boost.

I'm still intimidated but I'm getting somewhat braver LOL do you always have to have the liquid on the bottom even if you're not cooking rice when using the rapid cook mode also I'm still a little confused about where the Shelf thing is supposed to go, depending on which function. You only need water in it if your using a steam option, when it’s using the bottom element, which is all the options on the left hand side. If you just using the airfryer, or grill things on the right hand side are not using the bottom element, except the sear and sauté which you would be frying in with the top open. And the reason you need water when using the left hand side is to stop you burning the bottom of the pan. You wouldn’t stick a pan on the hob without water in it.
I cooked 4 cups of rice, on top crisper tray brocoli, baby bock Choi, put in some sherred rostisory chicken. Used the rapid cooker mode 300 temp for 15 mts. My rice came out flofy very nice, my veggies burned-out, chicken was crispy. My question to you can I make steam rice only in the air fy mode without cooking anything on top of the crisper tray? Great...learned a lot...So with the baking/roast...If I am doing brownies...just put in container size that fits inside...set temp & time & go...no water 'cause it's not steaming...just baking..right? Thanks so much...

James, many thanks for all the great videos. I got my Speedi yesterday and it's great, of course. Question: It is replacing an Emerald 14 in One Multi Cooker which stopped working after 1 year. The Speedi is a much better device but I miss the much larger cooking pan of the Emerald. I've searched but can't find a Ninja cooker with a very large rectangular pan like the Emerald that steams, fries, bakes, roasts, broils, slow cooks and dehydrates. Does such a beast exist or is there another multi cooker you recommend that would likely be a better choice than buying another Emerald?

Thank you for this information. I have a question about the Speedi Meals setting. When I was cooking chicken in the top and pasta in the bottom I thought the air frying didn’t start until the last few minutes of the cycle. Is that wrong?

Just got my machine. I had a Nutrichef before,and was NOT completely happy with it. The worst thing was that the grills got heavily corroded just after the warranty expired. It *did* do the kind of meals I like,such as meatloaf and fried chicken breasts,but I am *not* a gourmet chef! My first use for the Ninja will likely be cooking a roast beef,or fried chicken breasts. I know there is fancy computer programming to the modes, but I could not find a description of what each mode actually does anywhere on the Ninja site. It is particularly confusing on the Rapid Cooker side. I'm going to try to roast a turkey breast (not a roll, the raw breast, about 5.5 LB). Do you have a suggestion on the best method for that?

Hi. The smart lid can do everything the speedi does. The one lid pressure cooks which the speedi does not. When making speedi meal recipes, just use the steam and crisp mode with the one lid and use your racks. Hope this helps. I actually have both and I use the speedi a lot for smaller portions of food.

Likewise. I cook indian meals and I love Speedi. Indian cooking needs many utensils and it is ingreedient(~). Speedi makes it easy.

Use steam and crisp for protein
Can one buy an extra perforated pan so one is in the lower area and one is on the top. That way you can crisp veggies and protein at the same time

I reckon the slow cooking is better than other options to tenderise the toughest cuts of meat, or perhaps get the collagen off of bones.

@@blackjew725 you can do exactly what you do on the stove top, you just have to think of it as a compact stove top on the left settings, and a small oven with the settings on the right, with a bit of a boost.

Thanks so much. The shelf can be used on top or bottom.
You only need water in it if your using a steam option, when it’s using the bottom element, which is all the options on the left hand side. If you just using the airfryer, or grill things on the right hand side are not using the bottom element, except the sear and sauté which you would be frying in with the top open. And the reason you need water when using the left hand side is to stop you burning the bottom of the pan. You wouldn’t stick a pan on the hob without water in it.
I cooked 4 cups of rice, on top crisper tray brocoli, baby bock Choi, put in some sherred rostisory chicken. Used the rapid cooker mode 300 temp for 15 mts. My rice came out flofy very nice, my veggies burned-out, chicken was crispy.
My question to you can I make steam rice only in the air fy mode without cooking anything on top of the crisper tray? Thanks. I liked your video.
Yes. But not in air fry mode. Use speedi meal function
Great...learned a lot...So with the baking/roast...If I am doing brownies...just put in container size that fits inside...set temp & time & go...no water 'cause it's not steaming...just baking..right? Thanks so much...

James, many thanks for all the great videos. I got my Speedi yesterday and it's great, of course. Question: It is replacing an Emerald 14 in One Multi Cooker which stopped working after 1 year. The Speedi is a much better device but I miss the much larger cooking pan of the Emerald. I've searched but can't find a Ninja cooker with a very large rectangular pan like the Emerald that steams, fries, bakes, roasts, broils, slow cooks and dehydrates. Does such a beast exist or is there another multi cooker you recommend that would likely be a better choice than buying another Emerald?
Great question. Honestly I’m not sure because the steam function. I know other cookers that can but no steam

Thank you for this information. I have a question about the Speedi Meals setting. When I was cooking chicken in the top and pasta in the bottom I thought the air frying didn’t start until the last few minutes of the cycle. Is that wrong?
It starts as soon as it’s done preheating.

Just got my machine. I had a Nutrichef before,and was NOT completely happy with it. The worst thing was that the grills got heavily corroded just after the warranty expired. It *did* do the kind of meals I like,such as meatloaf and fried chicken breasts,but I am *not* a gourmet chef! My first use for the Ninja will likely be cooking a roast beef,or fried chicken breasts. I like your channel,btw,and have subscribed!

I know there is fancy computer programming to the modes, but I could not find a description of what each mode actually does anywhere on the Ninja site. It is particularly confusing on the Rapid Cooker side. I'm going to try to roast a turkey breast (not a roll, the raw breast, about 5.5 LB). Do you have a suggestion on the best method for that?

Go by the directions on the bag of rice. I think usually 1 cup rice 2 cups water

I’m not sure about the smart lid. Haven’t used it. If it steams then yes
Hi. The smart lid can do everything the speedi does. The one lid pressure cooks which the speedi does not. When making speedi meal recipes, just use the steam and crisp mode with the one lid and use your racks. Hope this helps. I actually have both and I use the speedi a lot for smaller portions of food.

Steam and crisp shouldn't take that long. Steam and bake will take a lot longer
