I love the way he showed appreciation, and gratefulness towards the mushrooms before tossing them out. Really showing respect for the mushrooms. I loved that.
Since the Philippines was mentioned: We have a fermented papaya pickle called 'atchara' and you can use that for one of your projects. Also look for 'kinilaw' which is a Filipino version of ceviche.
He'd have a field trip with atchara! I don't personally eat that but my grandma like hers with radishes and red onions. Brad would find ways to experiment and it would still be great!
He probably could. Choose a grain and sprout it, ferment it, dehydrate and pulverize it. Could probably make a savory cereal or something with enough Brad imagination.

i found that washing button, white/brown/cremini mushrooms they don't absorb any liquid really, but shitakes definitely absorb all the liquid, you can see them fill up like a sponge and can ring them out. not sure about others
The tapered jar is a freezer-safe Mason jar. The straight but pitched sides allow for the natural swelling to push up the interior walls of the jar without breaking it. The fancy twisted jar is for canning but not freezing. The concaved sides of the twisted jar and the shoulders of the twisted jar will cause cracking in the freezer.
