Nice idea to ice three different ways. By the way your water icing is generally known as Glacé Icing (pronounced Glass-Ay). I’ve been making it for almost 50 years. I never mixed jam into icing sugar before, I’m going to try that, sounds delicious!!
I’ve never known for egg whites to be mixing with icing sugar, how much egg whites would you recommend to cover a full cake I’m going to try this tomorrow xx
Mine was higher too but it was fine once iced. The presenter does explain where to put it in oven to prevent it rising, but mine rose with a sort of dome, which I flattened! it turned out great though. You could always turn it upside down and use the flat bottom to ice.
Long it out? You’re actually not supposed to mix it all together! Most recipes you’ll watch will even show that to you. It’s a more controversial method and the batter ends up less fluffy. Eggs always need to be whisked in one by one.

using egg whites helps it have a harder texture there both good but with eggs i would say is just a bit better :)
