    I'm 2 years late to this party and have no idea what Levain cookies are, but I need an excellent cookie recipe right now! I cannot believe the effort you made to reply to nearly all of the questions. Reading them helped me figure out why I get different results sometimes. You rock!

      hi, you can certainly use the convection function but bake function will do. I just used the bake function.
      *NOTE: It will take lesser time when using the fan ON.

    Hi. How long will the cookies last after they are baked? I wanna box these cookies to family and friends, so i’m wondering will it be ok after lets say 2-3 days?

      Yes, cookies will be good up to 1 week. They need to heat the cookies up a bit in the microwave for 10-15 seconds so the middle will be gooey.

    i made one batch and they were so good. so i made another batch. but i wont need to bake them till later. how long can they stay in the fridge? can i freeze them and bake straight from frozen? thanks :)

      That’s great news. You can make them and chill (fridge) up to 1 week and 1 month in the freezer. Let the cookie dough sit in room temperature or counter for 5 minutes before baking them if it came from the freezer. 😊

    I just found your recipe, and already made twice.
    The first one, with your original recipe, taste too sweet for me, and i overbaked.
    So the second one i reduced the white sugar amount, and it turned really great and delicious.
    Thank your for sharing this recipe, i live in indonesia and never visiting NY though my sister in law live there. So this cookies good enough to feel the taste of NY for me 😬

      y a Thank you! Yes you can make cake flour using all purpose flour and cornstarch. For every 1 cup of APF remove 2 Tbsps of APF then add 2 Tbsp of cornstarch, you now have 1 cup of cake flour.

    Hello! I would like to ask, If its 100 gms dough only? What baking temp and time do you recommend?

      Not sure if channel will reply,
      I did 140g (so 30g less than recipe) and kept same times, and did the temp at 200.
      I would recommend, for less dough,
      Same temp as me: 200°c (otherwise they will spread if it's lower temp)
      And I would try 13mins
      Try a single cookie first to test it.
      Let it cool after baking for an hour before taste testing so it can set in middle.
      If it's underdone, do it for longer,
      And opposite if it's a bit dry.
      Mine browned quite quick, so keep an eye on them after 10min mark so they don't burn.

      Sorry for the late response. Please bake the cookies at the same temperature but less time. Each oven is different, so you may want to try baking 1-2 cookies first to test how long you will bake it for. I would suggest 10-12 minutes first, if it is still shiny in the middle, bake for another minute or two. Hope that helps. Happy baking!

      Hi, I baked these without fan. But you can certainly bake these with the fan ON. Baking times may vary/ shorten with the fan on.

      Hi, you need to let the cookies cool down in the baking tray for 5-10 minutes before transferring them in a cooling rack. I know it is very tempting to try the cookies as soon as they come out of the oven but cooling them will make it easier to handle. Hope that helps. 😊

    Hi! Your copycat is great! If i wanna make the cookie not raw inside, how long the time & heat do u suggest? Btw im using small oven with no fan in it

      floral dray Hello, you can bake the cookies at the same temperature for 18 minutes if you want them fully cooked and still be chunky. You don’t want to bake them more than that because it won’t be chewy inside anymore.

      Hello, yes the bottom should be crispy and should hold its shape. Make sure to preheat your oven before baking the cookies.

      Hi, I only used the bottom heat. No need to use the broiler. Make sure to preheat your oven before putting the cookie dough in.

      Hi. yes these cookies are crispy on the outside and very moist inside. Make sure to store the cookies in an airtight container so the texture will stay the same and these can last for a week.

      Liseth Guevara Báez You don’t need to use a convection oven, a regular oven will do. I have a convection oven but I didn’t turn the fan on. I haven’t tried turning the fan on and baking these so I can’t tell you exactly the temp and baking time. Just do remember that if you use a convection oven with the fan on, you may need to lower the temp and lessen the baking time.

      Liseth Guevara Báez I would suggest turning both the top and bottom heat on so the cookies bake evenly. Another tip, since the temp required is 400 F, put your cookies / sheet tray in the middle rack to prevent the bottom of the cookies from burning/ turning brown too quickly.

      Jade Medina Hi, I haven’t tried using bread flour for this recipe. In other cookie recipes, you can use bread flour. Bread flour has a high protein content which makes cookies chewy. However, Levain Bakery cookie has this signature cake like texture in the middle that is why it uses both apf and cake flour.

      @@thalitaputri6390 Hi, you can try lowering the oven temperature by 10 degrees. It will also be helpful if you use a heavy duty/ thick baking tray to prevent browning/ burning the bottom.

      Yes. If you don’t have cake flour, you can make it. For every 1 cup of all purpose flour, remove 2 Tbsp of apf then add 2 Tbsp of cornstarch, you now have 1 cup cake flour.

      Jennifer Peterson I baked them in the middle rack. Btw, it is not a silly question. I tried baking them in the bottom rack but it is too hot that it bakes the bottom faster than the top. 😊

I think this details are overlook in everysingle recipe I see on the internet, temps and time. I actually burned my cookies last time so im lookin not to do that again

      It actually depends on your oven. For this recipe bake the cookies in the middle rack. If you don’t have a middle rack, bake them on the top rack. Usually the bottom rack of the oven is hotter than the top. Do not put your oven to broil mode just in the bake mode. I hope it helps.

      Fats Anja Cornstarch makes the cookies chewier. You probably won’t notice a big difference. Just make sure not to overbake the cookies so it will still be moist and chewy on the inside.

      Hi, chilling them overnight develops flavor and makes the cookie retain its shape.
      However, if you can’t wait that long, you can freeze them for 30 minutes- 1 hour.

      Hi, yes you can do that. TIP: Scoop the nutella spread into small balls/ dollops then freeze until it is solid then fill the cookie dough with the frozen nutella balls. Chill the cookie overnight before baking. For sure it will be amazing! 😊

      @@FrankieBeanss I would get a big bowl. It is advisable to use a hand / stand mixer for this recipe because it starts with cold butter. It is quite hard to do it by hand.

      Hi, you mean substituting cake flour?
      For every 1 cup of all purpose flour, remove 2 Tbsp then add 2 Tbsp of cornstarch. Now you have 1 cup of cake flour. I hope I was able to answer your question.

      Hello, it means that if you don’t have cake flour, you can use all purpose flour and cornstarch to make your own cake flour. Measure 1 cup of apf then remove 2 Tbsp of apf and then add 2 Tbsp. of cornstarch.
