Levain Bakery Inspired Chunky Chocolate Chip Cookies Recipe

- A cookie inspired by the popular Levain bakery in New York City. I have been playing around with this recipe for ages and am finally sharing it.
This version is less sweet and also slightly smaller in size than the one it is modelled after. It’s a cookie that has a crisp edge and gooey middle whilst hot, a soft middle when warm and a fudgey middle when cooled.

Ingredients list:
Makes 5 cookies
115g unsalted butter, softened
75g light brown sugar
50g caster sugar
4g fine sea salt (you can reduce to 2-3g, see note above)
40g eggs
10g vanilla extract
7g skim milk powder
3g baking powder
2g baking soda
7g cornstarch
110g ap flour
60g cake flour
100g 70% dark chocolate chips
50g walnut, toasted, skinned and chopped

Thank you for your recipe. I tried it and it tastes really good. But the dough is a bit wet so it’s hard to shape it. Not sure if it is overmixed. But the texture and taste are perfect.

Hi! I wanna ask is the cake flour necessary? Can it be substituted with other ingredients?
I'm definitely trying this. I've been on the hunt for a good choc chip cookie recipe. Mine is always great when it comes out of the oven, but sets too firm and crunchy once it cools.

Interesting recipe! I’ve tried a few levain style cookie recipes but this is the first time I’m seeing the addition of cornstarch and milk powder. What do the cornstarch and milk powder add to the recipe? Excited to try!

@@samanthalee9197 Yeap! Just maybe use a slightly lower temperature as the heating element is pretty low and quite close to the cookie.

@@christinaalexander1141 Yeap, because they are actually quite big. You can double the recipe if you wish but I wouldn’t change the size as it’ll affect the texture

They were lovely gooey in the middle and chewy! But mine spread a bit more than yours, that is what went wrong hehe :D But overall the recipe worked!

@@tinaxiao3399 hi! I’m glad you like the recipe. You can put the dough in the fridge for a little while so it’s firmer and easier to shape. It could be the weather where you are which makes the butter/dough softer than where I am but placing it into the fridge will do the trick as it’ll cool and firm the butter up ;)
