Leave room for a good significant twist to seal in the filling. Apply pressure above the seal to move the filling while making adjustments as the filling level drops.

Handy hint is to dip your cutter into flour and give a bit of a twist to release the dough. My mother was a champion donut maker and I even have her donut cutter with the hole in the center.

You need to learn how to make & roll up your own piping sleeves (bag) using parchment paper, it is easier than you think: useful for all sorts of fillings, icing/decorating cakes, then you just throw it away each time. I learned how when I took a cake decorating class. Also, the reason water is used instead of milk, is that using milk tends to brown too quickly when frying. Also, get a Bismark filling tip, very useful for filling donuts, cream puffs, etc, much longer than the tip you used. Seedless Raspberry jam is more traditional in donuts, btw
I know you move house a lot, but if you are ever in a position to own an Instant Pot, the Yogurt, Low setting is perfect for proofing dough. At least in my experience.
I think that an injector would be better than a pastry bag to fill these, then you would be able to keep an eye on the exact amount you are injecting. Looks like an injection needle, but for food!
I'm a little confused. In your video you put the whole egg but in the list of ingredients it says 3 large egg yolks. Which is the proper ingredients. Thanks so much for your videos.🥰
