Okay, it is time to tell you about this. I've been following many sailing channels over the years. I came across yours some time ago when you had just left port on the east coast of the US. I subscribed after I heard that you planned on sailing around the southern end of South America. No way, I said. I didn't pay much attention to your channel until you turned south somewhere out there in the Atlantic. Ever since, I've been humbled every time you upload a new video! And here again tonight, I am speechless as you head west from Chile. Damn was I ever wrong about you! I am sure you realize by now that you are setting new records with your trip. I appreciate that some missing batten screws could be considered a "breakdown", and you were right to stop and fix the issue. I also appreciate that you are trying to get more views by having an overly dramatic thumbnail, but please don't fall into the clickbait trap that most sailing/lifestyle channels have. I have a lot of respect for your seamanship and have learned a lot watching your channel. Fair winds.

Good decision to head back to the hill, considering the long passage ahead. Do you have your old main sail on board? Always remember that as long as you keep water out of the boat and the mast pointing towards the sky, anything else is just an inconvenience. Fair winds.

If I had known that you were going to stop in Algarrobo I would have gone to visit you. Santiago is 1.5 hours from Algarrobo by car. I would have liked to invite you to lunch or at least a beer.

loctite is probably a good thing to use on the screws.... any reasonable spray paint in a pinch (spray some paint on a card and use a cotton swab as a brush).
Flour varies around the world. In the US there is a difference between AP (I actually prefer UB) and bread flour, in other parts of the world, AP is pretty much the same as bread flour (speaking as a Canadian). The big thing is generally don't take rise times to heart. Yeast and bacteria multiply twice as fast for a temperature rise of 17 degrees.... which of course means slower at lower temperatures. Don't be afraid of letting it raise longer than the recipe suggests if it looks better.... it will be different depending on the air temperature and humidity so you need to adjust your times on the fly. I have had AP flour kill my starter (Robin hood AP as happens) and so I use whole wheat (or whole grain if I can get it). That is part of the reason I suggest UB (unbleached) if you are not using whole wheat. Of course at this point, you have on board whatever you have and it sounds like you have some WW anyway so mixing that with AP will help. I store my flour in the fridge but I doubt you will be able to so keeping it close to the hull.... as cool as you can will help it last longer. Whole grain flour changes as it ages, which is why you generally find whole wheat (which has the wheat germ removed) because it lasts on the shelf longer. If you use bleach to treat your drinking water..... that will affect things too, if you have bottled water, it _should_ be chlorine free. Sorry for the brain dump ;)
You may think Roxy is going to the bow to do her loo duties, infact she is going to the heads. In older tall ships the seats of ease were located within the bow rails. Perhaps she knows this and is just doing what comes naturally.

If you get bread flower instead of all purpose flower your success rate will go up. One part whole wheat two parts white is a good mixture. For gluten to form properly you need the highest protein flower you can get. That is why bread flower works so much better. You might get a pizza stone for your oven. I leave my pizza stone in the oven all the time.
I will be sure to grab that once in a large grocery store with plenty of options! The bread journey continues!

Really enjoyed watching! Also, great job keeping the boat looking really clean and tidy. That can be really hard to do while cruising. The gelcoat looks beautiful, as does the nonskid and hull.

Your dough looks too stiff ? Maybe add just a few drops of water? Using some rye flour is helpful in starter and bread.
I use 25% pizza and pasta flour which keeps the bread softer longer. More moist perhaps?

Hi Ron!!!!!!!! We will have some info on Autopilots and backups and actual use of them in an upcoming episode (details of it are on Patreon in a real time update blog from the Pacific crossing). Our backup is a second complete electronic system (pilot computer, compass, ram). The backups to the backups are sheet to tiller (emergency tiller with blocks) and/or a drogue. The latter are untested in the real world, but work in theory :-)
That's not a breakdown, that is an inconvenience, and you want to mix your sour dough right, you gotta get your fingers in it, more tactile, you can feel the dough form, my Pops was a executive chef for 40 years, and his sour dough was the best I ever had, even till this day...but his starter was at least 20 years old at that time......yeah...the longer you maintain it, the better the bread, so, good luck and hope you have many loaves in your future...I can't live with out my sour dough.

How does it work with immigration and customs when you do this? I assume you had to check back into the country and clear it all again?

It is the boats official offshore racing number. 46 is its length.
You're going to get back to piloting the boat. People don't get a drivers license for boating, they get a piloting license.
You are compedent sailors, cut the clickbait over a few bolts that you could have easily haywired. You were close to land so it was easy to return, that was the story. I like your blog's just stay professional and real
