    I've used this marinade recipe several times with chicken and pork. It's the best marinade I've found and really breaks the meat down, tenderizes it and gives it a good flavor. Keep making these great vids guys!

    The beer mop/sauce recipe is one I've been unsure as to how to go about making. I know exactly what my favorite beer is, and as soon as I can get that grill fired up, I'm going to give this recipe a shot! Thanks again, BBQ Pit Boys!

    I buy a nice side of beef such as a brisket or chuck roast...
    I add about 3 cans or two large bottles of beer (any brand)
    In a medium sized roast pan I cut up a large sweet onion and toss it in...
    Then I sprinkle in old bay seasoning (lots)
    I throw in about a tsp of mustard (brown)
    Add about a teaspoon of salt (coarse)
    Add about one teaspoon of freshly ground pepper.. (cont,)

    Ahh heck...
    Here it is..... heh
    I buy the largest sweet onions in the market ;)
    Slice them in half and then in nice even slices..
    Cook in a large pan or grill outside in olive oil..
    Sprinkle old bay seasoning all over -- generously..
    Sprinkle with freshly ground pepper and salt.
    A simple recipe and delicious.
    They are delicious with cheese steaks and burgers! ;)

    I was wondering: my favorite beer is guinness, which has a distinct flavor and a jet black color. Is there any way at all to incorporate that into a Q recipe?

    Allow your brisket to soak in this marinade for at least a day.
    Place in a smoker grill outside and allow to bake for a few hours -- alternate with the lid on and off.
    This proves to be a crowd please for me when I have friends over :)

    I think that he is afraid of actual sugar that might char up on the grill unlike the carbs in beer, which take heat without burning.
