The fact that they liked it, means you did good. Take their suggestions and by time, you will have the adobo taste your family wants and just stick to it from that time forward.
In addition to the comments for less onion more garlic, a little less vinegar and yes to add a little brown sugar, I cut the chicken to smaller pieces and simmer longer withe the cover on to get the chicken tender and absorb the flavors. I'm half filipino and it's taken several attempts to get it the way I like it. Everyone makes it a little different. I like it with more sauce, some like the sauce reduced. Good job!
for adobo, 1 cup soy sauce and 1/2 a cup of vinegar. if you put 1 cup of vinegar it will be very sour. next time mix first sugar with vinegar then pour to the adobo marinate. black pepper should be make into powdered to release the spicy flavor. and don't forget the GARLIC because it will not taste adobo without GARLIC. the dish you made is similar to japanese chicken teriyaki because you add ginger.

11:29 children always love sweeter foods. In The Philippines mostly add brown sugar to their chicken Adobo. Also we always used White vinegar or Coconut vinegar with Soy Sauce and brown sugar. Maybe your children used to eat the sweeter version of chicken adobo in Samal.
Hi val just a friendly reminder, the secret of more tasty flavor of our filipino dishes is to saute all the spices specially the onions, garlic, ginger and make it golden brown, the reason for this is to release the aroma of those spices and be absorbed into the meat or veggies, then after sauteing the spices you put the meat or vegetables. if you don't saute it first it wont be as tasty as our real filipino way of cooking.

For every cup of soy sauce there is equal part of vinegar. and sugar from 1/4 vup to 1/2 cup valentina... Just use this ratio and your adobo will be just fine
i suggest you mix the soy sauce and vinegar and taste it first before marinating. and yes you can add bit of sugar. still depends on your soy sauce some soy sauce are already sweet. if you want more umami, you can add some chicken cube/broth adjust to the saltiness of soy sauce. if you want dry adobo, braise it with the marinade and water and fry it in the end. if the chicken is oily you can fry it in its own oil, if not you need to add oil ti brown it well in the end. the sugar will help it brown in the end. if you want soupy adobo, you fry it first until brown like fried chicken. then braised it with remaininh marinate and water and adjust some chicken cube proportional to the amount of water you put.😮

I have my own version, chicken adobo with pineapple, sometimes with saba or small egg or we call it itlog na pugo...there are so many variations how to cook adobo and you can create your own style of cooking Valentina, but the important thing is how you care for your children 👍😊❤️👏👏👏👏👏👏

For adobo, no need to marinate. Just add all ingredients and cook it in slow fire until tender and no need to add cooking oil bcoz chicken has natural oil.

You can add 7 boiled eggs , remove the shells, then add and mixed it with the sauce. Make sure not to break the eggs... It adds flavor to the chicken adobo.

Valentina when you marinate the chicken you use calamansi or lemon juice not vinegar but just make sure you remove the seeds,the chicken will be more tastier marinate for at least 30 minutes.Fry the chicken then fry the onions and garlic,put oyster sauce,then the marinate sauce and then add vinegar but only a half cup so it won't be too sour,add water to cook while boiling you can add brown sugar, you can also add potatoes and bell pepper which gives it a more aromatic smell,then serve with hot rice.
@ you're welcome! kalamansi or lemon is for marinating the chicken,it makes the meat delicious and softer and easier to cook just leave it marinated for more than 1 hour.You can still add a little bit of vinegar when cooking the meat and also add a little bit of brown sugar.
The traditional way is to sautee garlic until it changes color. Then add onions and ginger until caramelized. Then you can add the chicken and fry a bit before adding laurel, peppercorns, soy sauce, and vinegar and some water with some sugar. MSG is normally used. Up to you. Simmer until tender. Adobo is very good with garlic and some brown sugar. Dont use to much vinegar one cup is too much. Maybe 1/2 cup because 1 cup might make too sour. But everything else looks good and yummy!

You don't really need the ginger (though it's fine). Also, 1 cup of vinegar for 1 cup of soy sauce is WAAAAAAAAAY too much! I suggest 1/2 cup vinegar for every 1 cup soy sauce. Sugar is also something we would use to balance the flavors. So less vinegar and some sugar while cooking might give you that darker sauce and more classic taste your boys might be looking for. Your son is right: I would *seriously* suggest you try cooking adobo _without_ onions as I feel it would be more traditional. In fact, the ancient recipe (adobong puti) does not have any onions at all; it was really just salt, vinegar, garlic, and meat. I've tried adobo with onions and it tastes VERY different from what I grew up with. Try my recipe for adobo and see what you and your family think: 250ml white vinegar 170ml dark soy sauce at least half a bulb of garlic, peeled and crushed 1kg chicken (thighs and/or drumsticks recommended), fat trimmed 1/4 to 1/2 tsp cracked black pepper to taste 3 tbsp brown sugar 3 bay leaves In a pot, combine vinegar, soy sauce, garlic, bay leaves, pepper, sugar, and chicken. Let cook on medium heat (about 120-140 degrees Celsius on an induction stove) for 30-40 minutes. Don't forget to skim off any impurities as it cooks, and to stir.
Val next time you make Adobo , put 7/up or Sprite instead of Sugar and Lessen the Vinegar maybe just half a Cup that’s why Misha said is Sour … And use Chicken Cube for seasoning and Black Pepper….

When I am cooking adobo I just put all the ingredients. Pork or chix, lots of garlic, soy sauce, Vinegar (but not too much), laurel, pepper, salt and seasonings like magic sarap or ajinomoto and water. just boiled it till tender and the sauce thickens. 😊 Thats it. No need to add oil since pork and chix produce oil by itself.😊

Valentina when you marinate the chicken you use calamansi or lemon juice not vinegar but just make sure you remove the seeds,the chicken will be more tastier marinate for at least 30 minutes.Fry the chicken then fry the onions and garlic,put oyster sauce,then the marinate sauce and then add vinegar but only a half cup so it won't be too sour,add water to cook while boiling you can add brown sugar, you can also add potatoes and bell pepper which gives it a more aromatic smell,then serve with hot rice.

@ you're welcome! kalamansi or lemon is for marinating the chicken,it makes the meat delicious and softer and easier to cook just leave it marinated for more than 1 hour.You can still add a little bit of vinegar when cooking the meat and also add a little bit of brown sugar.
The traditional way is to sautee garlic until it changes color. Then add onions and ginger until caramelized. Then you can add the chicken and fry a bit before adding laurel, peppercorns, soy sauce, and vinegar and some water with some sugar. MSG is normally used. Up to you. Simmer until tender. Adobo is very good with garlic and some brown sugar. Dont use to much vinegar one cup is too much. Maybe 1/2 cup because 1 cup might make too sour. But everything else looks good and yummy!

You don't really need the ginger (though it's fine). Also, 1 cup of vinegar for 1 cup of soy sauce is WAAAAAAAAAY too much! I suggest 1/2 cup vinegar for every 1 cup soy sauce. Sugar is also something we would use to balance the flavors. So less vinegar and some sugar while cooking might give you that darker sauce and more classic taste your boys might be looking for.
Your son is right: I would *seriously* suggest you try cooking adobo _without_ onions as I feel it would be more traditional. In fact, the ancient recipe (adobong puti) does not have any onions at all; it was really just salt, vinegar, garlic, and meat. I've tried adobo with onions and it tastes VERY different from what I grew up with.
Try my recipe for adobo and see what you and your family think:
250ml white vinegar
170ml dark soy sauce
at least half a bulb of garlic, peeled and crushed
1kg chicken (thighs and/or drumsticks recommended), fat trimmed
1/4 to 1/2 tsp cracked black pepper to taste
3 tbsp brown sugar
3 bay leaves
In a pot, combine vinegar, soy sauce, garlic, bay leaves, pepper, sugar, and chicken. Let cook on medium heat (about 120-140 degrees Celsius on an induction stove) for 30-40 minutes. Don't forget to skim off any impurities as it cooks, and to stir.

When I am cooking adobo I just put all the ingredients. Pork or chix, lots of garlic, soy sauce, Vinegar (but not too much), laurel, pepper, salt and seasonings like magic sarap or ajinomoto and water. just boiled it till tender and the sauce thickens. 😊 Thats it. No need to add oil since pork and chix produce oil by itself.😊

Well val actually d original taste of adobo is sour,we dont actually put sugar with it before,then after few years they added sugar with adobo...d kids like it a little bit sweet val but me i want it a little bit sour than sweeter!!❤
