Those are just air bubbles in the chocolate from the overlap swipe during tempering not crystals. That wasn't gritty what so ever probably first tempering stage. He's not really losing much. Big places buy bulk a few bucks per lb. It's losing about as much that would be wasted in clean up. Totally he's maybe lost 3 cents worth that would have been washed out of the gun. Relax its his money not yours. You'll survive *pats head*

You should try different types of tapes in the outside surface of the molde to make sure you don`t damage it
