About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes. Its the best Thai cooking vid's i have seen. I tried the Steamed fish with Lmon Sauce/Green Curry and the Chinese Broccoli its come out perfect .My 28 visits to Thailand came in handy as to my point of reference with taste.
My question is the Lemon sauce made with the Steamed fish the same sauce used as a dipping sauce when i have raw Veg in the local restaurants,Which most of the locals eat . It has the same look and taste or is it made differently.

i normally order this when we go to any thai restaurants and it is always really expensive...so i decided to cook it on my own using this recipe. i followed very closely, except for the pickled garlic and it was so delicious! better than restaurant's one, if i may add. thank you and pls keep those recipes coming! :)

I made a variation of this dish last night, cooking the fish in the oven wrapped in foil instead of steaming it, with torn kaffir lime leaves, chopped cilantro stems, chunks of lemongrass and a third of the sauce, then I poured the remaining sauce on the cooked fish. It was just slightly too lemony as I unnecessarily added the juice of half a yellow lemon to my lime juice because I thought there wasn't enough. Still, it turned out great. Thanks Pai. I've made this multiple of times. Sometimes I used two fish cut in half, throw in some enoki mushroom and wrap in tin foil and steam. I eat 1 portion and freeze the other 3 portions to heat up and eat another day. So good. The sauce also last quite some time in the fridge. Thanks Pailin for the recipe. This is my absolute favourite❤❤

Hi! Thanks for your comment! If you want more liquid, you can add fish or chicken stock, but to maintain the flavour you have to make sure it is a mild flavoured, unseasoned broth. I would not use store bought stuff, it's best to make your own. And then increase the fish sauce and lime juice proportion as well since you're adding liquid. Good luck!

Yay! I'm glad you gave it a try despite your initial skepticism :) Honey is a great idea, I actually thought about that after the shoot as a substitute. I sometimes add beech mushrooms in with the fish myself. Congrats!
I’ve tried it and it tastes exactly like what I’ve eaten at the Thai restaurant! Followed the recipe up to the Tee except for the pickled garlic and it’s delicious! Rather than me paying $20-$30 plus for this dish, it’s better I make it myself with all the fresh ingredients. Thank you for the recipe!

I am loving all of your recipes. I have been wanting to branch out and make other types of cuisine. ....But, it always seems you have to buy a lot of different ingredients to make just one dish. Your recipes are all different, but they use a lot of the same basic ingredients. Everything is very economical, which is wonderful when you are starting out cooking new dishes. I am getting hooked on Thai food. It's very filling without making you feel 'heavy'... very healthy. Thank you for sharing ...!
Finally found fresh barramundi fish in the local supermarket and tried this dish last weekend, it was AWESOME!
this recipe is soo tasty, i tried it using sea bass as i can not find barramundi fish, i just love the freshness of the lime and the combination of the ingredients are awesome. thank you for sharing the recipe.

Barramundi is one great tasting fish and i had those in Darwin, AU. I've been to Thailand like eight times and i always order this dish...

Great recipe. I remember in Thailand they used to serve it in a metal tray with votive candles to keep the sauce at the right temperature
my girlfriend uses coriander instead of Chinese celery and turns out great, just made it couple of days back.
Bumped into your page while looking for mackerel recipes, and we so going to try the mackerel red curry that you had cooked. Looks good! by the way a few lime wedges would top off this dish too. Also red Snapper is an alternate for barramundi, although I live in Aussie. Hope to try more of your recipes.

I got it from an Asian supermarket. Stores in Chinatown carry them too, wherever they sell steamers, they probably also sell the tongs.

Incredible! I was skeptical about the sauce, but not since I just ate it :) I used some honey as the sweetener and poached a filet of flounder in lemongrass. The fragrance and taste was amazing. I also threw in some sliced mushrooms in the poaching liquid. Served it all on a bed of broad flat noodles and it was heaven. The flavours in the sauce came together like you said. I'll be using this sauce again for sure!

It's a steamer, although it's not specifically a fish steamer. I use it to steam anything. I got it from China town, you can probably find something similar in Chinese or Asian stores.
