This is one of the best reviews on anything I've ever seen. Great format, love your dedication to answering questions and how many details to include... Thank you!!
I know he already said in the video there's no difference in taste between wood and propane for pizza. But this is the internet so a lot of people will disagree and swear up and down they can taste a huge difference. This is how it works: Pizza's cook in 60-90 seconds, 5-7 minutes for a long NY bake. 13'ish minutes for a really long Detroit bake. I own a smoker, I put wood in with charcoal and cook ribs for SIX HOURS. If you could get any detectable smokey flavor at all from cooking a pizza for 90 seconds, cooking ribs for 5-6 hours would result in inedible food that tasted like pure ash. And I cook my Brisket for 16-18 hours. Also, in a smoker the wood/charcoal/pellets go under the cooking surface and the smoke rises and penetrates the meat from the bottom. In pizza ovens, the wood is level with the pizza so the smoke rises and never touches the pizza. So even if 60 seconds was long enough to infuse a smoke flavor (which it isn't) it still wouldn't because the smoke never comes in contact with the pizza. I've cooked over 500 pizzas, and there's no difference in taste, the only difference is wood's a whole lot more work. It is an experience some people enjoy, but you're not getting magically smoke tasting pizzas from all that extra work. Wood can give a different look to the leoparding, but the taste will be identical.
For pizza. Yes definitely agree. For pizza. What I will say though is that because of how we identify flavours and smells, if you serve the pizza in the vicinity of a wood-burning fire there will be a noticeable flavour at least in the air. Personally I prefer woodfire hands down over gas. I feel like it's easier to use. Gas you have to regulate the deck temp and the cabinet temp every few minutes, whereas woodfire you can stop whenever you like and then stoke the fire with a few smaller logs and be right back up to optimal temp in a heartbeat. Obviously woodfire takes more skill and effort, but I believe it's definitely worth it when you get used to it, it also makes a warm convivial space that only a woodfire can create; everyone huddled around it. Smoking is definitely doable, it's just down to temp control - which again, is not easy without experience. Get a half decent wire rack and the smoke will penetrate from all sides. I'd recommend the OG dome for anyone that is really interested in learning and cooking amazing food. Simply because - with enough creativity - you can do anything. The S1 makes no sense to me now...just buy the XL Arc. I think the roccbox still has its place, especially in places more susceptible to wind. Even though I have a dome currently, I am tempted by the Arc XL, just because it is so transportable. I think it fits a really nice niche where it can be a stove and an oven at the same time and is light enough to be taken on camping trips.
Go with what you like to use. Many prefer wood for the experience, not necessarily any taste difference. For me, pizza isnt a rush food, and doesnt require efficiency of setting a dial, so building a fire enhances the wait time with a beer in hand. To each their own 🍻
This is true. My pit boss will impart very little to no flavor if Im cooking a hamburger or steak but will impart huge smoke flavor if i cook a brisket for 16 hours
I’m not buying any of these unless you tell me which one is haunted by that ghost that closed your gate. I definitely don’t want the model that comes with that feature
I went back and watched that a couple times, not sure what was going on there, either it was the dog and he got cut out when i edited the video or it was the wind :)
Ive owned my Cadillac Gozney for two years now. Everyone loves the pizza that comes off it. I did purchase the door because I moved from California to Nevada. Funny that it states on the inside of the door to not use while oven is on. 😂 I run my stone up to 850 to 900 then cut the flame to low and slide that pizza in. My last pizza oven was a Webber Genesis. 👍
Thanks for we’re watching and taking time to comment. Yeah they tell everyone not to use the door with gas just to prevent any issues with the flame going out in gas building up inside the oven as long as you use common sense and leave the vents open and leave a little crack in the door when you’re using gas, you should be fine.
I really appreciate this and don't care if your'e sponsored. The Arc Xl seems like the best fit for me so I appreciate as much info as possible so I can make the best decision for my family.
I agree on the wood subject, I have a ooni karu 12 and managing the wood is a hassle. I’m switching to gas this season. Not sure yet if I just buy the ooni burner option or upgrade my oven. I really like the Arc.
The ooni burner is very efficient, my only complaint is that it is in the back which makes it hard to see how the pizza is cooking in the back and the control is in the back also.
Funny story: i recently bought a roccbox. I recall watching one or more of your videos beforepulling the trigger. I now have buyer's remorse in that I wish I'd waited for the Arc XL. I just watched this video and pulled the trigger and bought the XL.
I’d like to see temperatures at various settings. For example what temp can it maintain consistently with gas at minimum settings, half setting, and full.
Given the 3 Gozney models and you were upgrading from the Rockbox, would you choose the original? With the Arc XL+, what would compel someone to buy the original? Is the original the most versatile? It is as almost Gozney evolution has singled out the original for extension. You having all the models, is the original still your go to? I’d like to hit the button on the original but not sure having the wood option compelling enough to buy but I’d appreciate your thoughts.
It's kinda of a misconception that using wood for Neapolitan pizza gives it a wood smoke taste. for Neapolitan you need the oven and fire super hot at around 850F when a wood fire is this hot it burns very clean (If using dry wood) so there really isn't much if any smoke, and the pizza is only in the oven for 60-90 seconds. Wood is great, and fun to use if you have the time to manage the fire and are going to be cooking enough pizzas to justify the extra time and effort. Even the AVPN now approve gas ovens. So long story short, I wouldn't recommend wood fired pizza making unless you do it once in a while just for fun for a couple pizzas or you buy or build a large stone oven that retains heat for days, none of these smaller home ovens are worth the effort to use wood over gas. I really like the DOME S1 (Gas only) it still has the style of the old DOME but has an improved igniter. I like the looks of it better than the Arc. but not sure if it's worth the exta $ over the Arc, the arc has a nicer burner and temp gauge and is easy to move around. They all make great pizza so it really comes down to which style you like best. Please use this link if you decide to purchase one, it really helps out my channel! Thanks
Ty from an expat Austinite🤘 Appreciate your thought, viewpoint. As for the org Dome, am more interested in cooking other culinary dishes vs a pizza ad I have my Rockbox to fall back on. Gozney is amazing when it comes to featuring chefs culinary presentations with the org Dome and Rockbox. Will go forward and acquire , eventually, the org Dome but I suspect Gozney will upgrade the org Dome with Arc XL+ features. Again ty for your time and excellent channel.
Hey. Can you provide the height of the space between the propane tank base and the table above that holds the Arc? I'm wondering how tall of a propane tank will fit. And what the diameter of the recess is in the base for the propane tank. Thanks,
The height using a standard US 20 pound tank is 12 inches from the top of the tank to the bottom of the oven and the recessed part has two circles, one’s a 6 inch for a standard US tank and the other outer ring goes up to 12 inches in diameter. It’s designed to fit either a standard US 20 pound tank or a standard UK tank
Great video. I'm also a neapolitan pizza fan, although I use the direct-dough method. Thank you for being so thorough! It's the S1 for me...if I can get lucky enough to buy one that is. lol
Thank you very much for watching. You should try my pizza dough recipe doing an extended fermentation really makes a big difference. Give it a try see if you like it. There’s a step one and step two in my videos.
I live in a cold climate and have a dome. In between pizzas the temp goes down pretty significantly. I use the nu2u door to bring the heat back up quicker.
I'm getting ready to do a small outdoor kitchen by our pool...I didnt know i needed the arc xl or a pizza oven in general until watching your videos. Hope you do some more pizza cook videos with the arc xl.
I’ve heard that converting an oven from propane to natural gas is a fairly easy procedure. This is based on some discussions I read on pizzamaking concerning the Blackstone oven. I don’t know why it would be any different for other gas ovens. The procedure involves getting a new metal orifice insert with a slightly larger diameter hole in it because natural gas is more dense and flows less freely than propane. Great video! I watched all of the way until the end despite the fact I’m still far, far away from collecting enough aluminum beer cans to pay for one of these amazing ovens.
Yes i have also heard of people doing these gas conversion's but it's better to call your local gas company to ask if they provided this service or can recommend a licensed professional. There is still a chance it will not work properly as with Propane and you will for sure void your warranty so it comes with some risk.
@@HarplandProductions There’s no fun in hiring a professional to do this sort of thing! The excitement come at the moment where you have your hand on the gas shutoff valve and you’re wondering if you’re about to ignite a fireball the size of your house or just bake a few delicious pizzas.
Thanks for this video. Your authenticity and passion for cooking comes through. I've wanted the Dome since it launched but I got inpatient and got a Karu 16. Loved that oven but when we moved to a new state I decided to sell it to get a Dome natural gas in our new place. However, considering the cost of running the gas line and getting the oven, I'm now leaning towards the S1 or Arc XL. I do agree that it seems there will likely be a Dome S2 coming at some point with the Dome form but upgraded features. I don't want to wait much longer so I think I'm going to get the Arc XL. If there's a new Dome at some point and I feel like I'm missing something maybe I'll upgrade but this video was very very helpful.
I’m glad you found the video helpful and I really appreciate the kind words, I agree I’m sure the Dome S2 will be out at some point, but it seems like the Arc XL is the right fit for you at this point and you won’t regret it! I have the possibility to get a Green Dome Multifuel with the stand and the cover for around 1450 used. 1,5 years old with still 3,5 years warranty. Arc XL retails for 810 now + 249 for the stand and 47 for the cover, so roughly 1106. I really think the Dome is the most beautiful oven. Would try to cook some bread as well and use it as a substitution for a standard griller. Especially cooking outside during summer would be a nice options to prevent overheating my kitchen too much. If you tell me I should go for the deal, I will do it 😂
The arc xl is the best bang for your buck! For just getting started, you can also do bread and pretty much anything in that oven. Also, it won’t be quite the same as doing it with Wood but gas is much more efficient and much easier to use.
With Arc XL having a wider opening, does this mean that it does not retain the heat as well as the larger domes? Which one takes the longest to reach 400C?
The Arc XL is much faster at hitting the 400C temp, the door / opening is wider but the inside height is also much lower so it heats up and retains heat very well!
Very good video. I have been looking at these ovens for a while. Thought I knew a lot until I watched this. With my studies as a pro cook, I definitely getting one! The best of any made I believe

Do you think the Gozney Arc can maintain a more constant temperature compared to the Gozney Roccbox for pizza catering? Have you baked a larger number of pizzas on your Gozney Arc XL? How does it maintain temperature, is the large opening an issue?
I honestly think it will be about the same, You might want to consider the Arc 14", i think it it will heat up and recover even faster than the XL. The main improvement with the Arc ovens is going to be the burner location and being able to adjust the flame without reaching your arm behind the oven all the time.
@@HarplandProductions I have experience working in pizzerias, and now I have the opportunity to work in a pizza catering for 50-60 people, but outdoors. In the pizzeria, I worked with gas pizza ovens, but now I need to buy a small oven. Would your suggestion be the Pizza Party Emozione, Gozney Arc (Small), or Gozney Roccbox (maybe two pieces)? Please reply. Thank you!"
Amazing video as always. Can you make a video comparing the start up on both ovens? The dome vs the arc xl? Im wondering if they fixed the issue with the pilot not igniting right away?
Good call out, yes i can tell you that each version has improved on the pilot light issue. The S1 is a huge improvement from the ignition of the original Dome and the Arc is even easier to light up.
Haven’t paid much attention to gas ovens as I was bent in wood fired and building my own oven. Then I saw a video this morning of a EU fellow with 2 Gozney ovens in his restored Chevy stepvan. Not sure what ovens he’s using, could be a pair of Dual fuel domes. Anyway…, my house isis on a natural gas line and a S1 with the ArcXL features like the new burner for natural gas would be awesome. Propane has a bit more BTU than nat gas but I’m sure they just do an oriface change. Could be something else but that seems to be the only changes I’ve seen between the 2 fuels. A Dome with the new burner would be cool for a mobile use or nat gas connection. S1 for mobile sounds good too. I mention mobile because I’m retiring next year and thinking about a side hustle to augment but I have plenty of house work to do since I work overseas all the time. Bla bla bla.
Yes, you’re talking about Adam at peddling pizza, he has two original dual fuel domes! I think if you’re gonna use gas and you want the bigger oven, the S1 has a little bit better igniter, and burner than the original dome, but the new arc burner and igniter is even better than that
Hey, great video. Thanks. I’m in dubai and we get butane cylinders here which people normally use with their bbqs and so I was wondering if this would also work on the arc. All info I read just said propane but really looking for a hack here
You will have to contact a local gas company to see what they can do, butane in theory should be compatible since it is also a LPG like Propane but you should also confirm directly with gozney
Just a FYI, the Step Two video link for your dough recipes currently links to the Step One video! I checked out both dough videos, but had to search for Part Two. I was browsing content after ordering an Arc XL yesterday, referring your channel during the purchase!
Strange, I just clicked on the link from my instagram / linktree for step 2 using phone and it went to the Step 2 video, not sure why your not seeing it @@kerndone
The only difference is, it’s a little little bit smaller, technologically wise it’s exactly the same it’s just a little bit lighter and a little bit smaller
Apart from looks is there really any need for the s1 over arc xl. Appreciate there is slightly better insulation but for home use not so much of an issue. I prefer the look of s1 but they should of put the new tech from the arc in there at launch as it seems a hard justification over price of the arc to warrent the purchase. Apologies if i missed something about these two ovens
I haven't tried the Gozney Arc XL, but based on experience, I think for catering pizza business, the Gozney Roccbox is still better, specifically two Roccboxes over the Gozney Arc XL (it's too large of an opening, without an arch and doors... It loses a lot of energy and seems to be designed for home use as a response to some other ooni ovens, which are certainly inferior to Gozney).
Really appreciate you doing this follow up video. The price of the Arc XL makes it something a lot more people can afford. I'm one of those people that has been contemplating the Dome S1, but the new features of the Arc seem too good to pass up on. Do you know if a 16" peel is coming out at the launch? Peddling Pizza mentioned a new 12" and 14" Thanks again for all your videos. Love your channel and reviews.
All I am seeing is a 14 inch peel right now the same one that Adam mentioned in his video. I reached out to them this week regarding if they’re going to have a 16 inch version and they haven’t gotten back to me yet.
The great thing about Gozney ovens are that they’re all very good at heating up, and retaining heat because they use commercial grade amounts of insulation in very thick stones. Obviously the smaller ovens heat up a little faster, but the minimum for good pizza is 30 minutes with the dome and the larger ovens. I usually give it 45 to 60 minutes to assure the stone is 850°F Minimum they take many hours to cool down. I usually don’t put the cover back on until the next day.
We are looking at the Dome S1. We already have the Roccbox and are considering the upgrade. We do not use the dual fuel option so the S1 seems appealing. We also like the fact that the stone can be replaced. 1- Of all of the ovens which is your recommendation? 2- We live on the coast of VA. Can it be stored outside if we use the dome cover, and then. The dome and stand cover? We hear of a lot of cracked stones due to moisture or condensation from being stored outside. Thanks for any insight.
Hello Thanks so much for watching and reaching out! I would definitely recommend either the Arc XL or the Dome S1, I personally like the looks and style of the S1 and it is my go to oven but that comes at a cost... so if your budget allows then the S1 would be my choice if you want to stay under $1,000 then the Arc XL is the best option. Which ever one you chose please consider using my link for Gozney, it truly helps out my channel and sometimes they through in some extra perks for my subscribers. Thanks again and keep me posted!
I think its time to get rid of my Roccbox and get the 14 inch version of the new Arc :) Something to think about. Only problem is you need the stands as well. so I doubt they will stop making the roccbox because its still amazing and portable and right out of the box you are set. You cannot buy an Arc without the stand, At least for me. Its a match :) 3 days left for a decision :) Great video!
Hey George, you can technically use it without a stand. It just won’t be as high as I typically like it you could always set it up on something like some paving stones or bricks I agree the box is much more portable, but the 14 inch arc is actually just a few pounds heavier so it’s still pretty easy to carry around. It’s just not quite as portable.
Thanks for the suggestions. I do have a pizza table that it will fit on perfectly. If I get it I am sure the wife is going to be upset LOL :/ Thinking time!
Could you, technically yes but you’re going to void the warranty and there’s a risk of getting ash in the burner, etc. for Neapolitan pizza gas works great and the pizza only needs 60 seconds so you’re not going to get much wood taste if anything. You could try a wood chip/pellet box amzn.to/4f4TIcm
Which one would you recommend if I wanted to use it commercially? Also, do you think the stones would be likely to break if I transport them a lot in a trailer? Should I think about buffering with some sort of shock absorption in the feet?
First off, thank you very much for watching and reaching out! I wouldn't worry too much about transporting them and the stone breaking, as long as your trailer has good tires, etc. it should be ok. Regarding which one is going to be best for your pizza business.... there are a lot of, "It depends", 1. t's really going to come down to the size of your space / trailer, are you going to have to be moving and or lifting the ovens The Dome is going to take up twice as much space and weighs more than twice of the Arc XL so if you are limited on space and want to be able to lift and or move the ovens by yourself then the Arc XL is the best choice. 2. Will your trailer have ventilation? if not then the dome has the smoke stack that can be customized to vent outside of the trailer or up through the ceiling, etc. The Arc doesn't so you will need good airflow to vent it, ideally at least 3 sides will be open. 3. Cost, you can get 2 Arch XLs and the booster stands for around the price of 1 Dome, so from a cost perspective the Arc XL is the better option. So if it were me and this was more of a pop up side business then the ARC XL is the best option. IF you are going to have a full time permanent set up with a lot of space then the DOME is nice and for me they look and are quite a step up in terms of build and commercial grade. End of the day, they both make amazing pizza and you can always star with the lesser $ option and after a year or 2 if you are still going strong then you can consider upgrding to the DOMe, etc.

Thanks for a great video. I live outside the US and am thinking about bringing back on an airplane. So can you give me an idication of the packaging? Do you think I can check it in? I know it would be over the weight, but just trying to get your thoughts on feasability. thanks
Yes, absolutely, it was very well packaged and yes you will need to pay over sized fee but it should be fine checked in. These will be on sale in Europe so i am not sure where you are located but might be easier to order from Germany or the UK, etc.
I don't normally like your videos, but this has been one of the best videos on comparing. What's great is you went through the 3 and most would only do 2. Well done, best thing I have seen on any product going through the differences/likeness.
I have lots of questions still 😢 To preface, I own two big green eggs. I believe you’ve convinced me that I don’t need wood ability. I love that I can light the egg and get it up to 400 degrees faster than I can preheat my oven. I use my eggs 3-6 times a week. I primarily want to do pizza on weekends. But on weekdays I do sourdough, wings, cast iron skillet meats and veggies, fish, sausages, anything else. This is usually done on the eggs or inside in my oven. I would like to know how to best REPLACE my indoor oven? Meaning? Bags of lump charcoal for the Eggs gets expensive and I want the ability to fire up a gas oven and get moving. I believe the answer to that is the dual fuel Dome. But… I have cracked numerous plate setters and fire rings in my Eggs. A non serviceable stone piece scared me. With the newer tech in the Arc XL, and the removable stone, and the idea that I mostly want the ability to use gas, makes me want to want the Arc XL instead of a dome. But I’m worried it won’t do all I want. This video also made me nervous to buy a Dome and then have a new and improved dome come out 4 months later… 😭 Help.
This is the video I’ve been waiting for. So helpful. I’m so on the fence now of getting the Arch now or trying to see if a year from now they potentially for a S1 with the features of the arch. Augghhhhhh. Great video. Maybe I should just build an outdoor kitchen and then see if it comes out next year. But I want it now lol. Great review.
Glad it was helpful! Be patient, you can always start off with a smaller oven to make sure you like making pizza then they are very easy to sell used , then upgrade.
Hey Matt, I got my oven!!!! This is my first Gozney pizza oven. I picked up the Arc XL and Stand this past weekend. I followed the instructions for mounting the oven to the stand but all 4 feet have about a 1/4 inch of wiggle room in any direction if you pull up on the oven. The center locking bolt is fully secure and you can visually see that the bolt is fully and properly threaded into the center of the oven. Is this normal? Or should the 4 feet fit snug and not budge at all? The instructions say not to overtighten the bolt. Does your Arc sit on the stand without any wiggle room? I even tried removing the oven and rotating the front and rear of the stand. The locking bolt is as tight as possible but you can lift any corner of the oven to the point where you can almost see the bottom of the rubber foot. I appreciate any feedback you or your viewers might have.
Yeah that doesn't sound right, mine wiggles a bit but not enough for the rubber feet to come out of the little indents. sounds like something might be missing, did you put the little 1/4 inch plastic spacer between the bottom of the oven and the top metal plate, the screw goes up through the top of the stand, then through the plastic spacer then screws into the bottom of the oven making it snug.
@@HarplandProductions Wow! Thanks for the prompt response! Yes, the locking bolt is going through the plate into the spacer and then into the bottom of the oven. I watched your unboxing video of the Arc and you were the only one that included a clip of mounting the oven to the stand. So I figured I'd ask. The feet don't come out completely but seems like more than what is intended. I don't think it would actually pop off the stand, but I was expecting a firm seal since the feet are rubber. I may try threading the bolt deeper through the spacer before putting the oven on the stand. Thanks again for trying to answer and respond to everyone. This is my second question with a response on this oven. I really appreciate your channel.
Thanks for this video..i had ordered the ooni karu 16 but was infatuated with the look of the dome but didn't have the space for it. Now after this i think I'm gonna buy the arc xl. I also thought i needed wood burning but you helped me there too. Im gonna see if you put a discount code on here and use it

Thank you so much for this video! If you were to compare just the burners and the way they produce the flame, is the arc that much more superior, or is it just a horse a piece? I can see that the burners for the Domes takes up a good chunk of real estate!
From a purely flame aspect they are not that difference in terms flame output, the main differences are like you said, it gives you about 3 more inches of usable surface space having it recessed into the side and also the pilot and ignition are much, much better, The arc is a one click and lit oven whereas the original dome takes a few minutes to get the pilot light to light and them to kick on.
Perhaps you can give some advice. Im looking to either buy arcs xl or emozione. Price is not really an issue (both are the same price) Im looking to do pizza partys at weddings, events, market etc. Can the arc and the emozione cook pizzas back to back? It sounds like you can do 30-45 pizzas per hour with the arc and 60-90 with the emozione (if you have an extra employee to.make the pizzas) or do i see this wrong? Hard decision which to buy, perhaps 2 arcs? Idk really. Pergaps you have golden advice. Ps: the emozione come with biscotto stones at no extra charge.
Thank you very much for watching and reaching out. If it were my decision i would opt for the Arc XL with booster and mantel. With 2 of these side by side you will be unstoppable :) I love both ovens but as far as using them for events and having to move them around and functionality the Arc XL is a better all around oven and will be easier to use in that type of setting and much easier to set up and transport. I wouldn't worry too much about the stone, it's a nice thing to have but by no means necessary to make great pizza and the factory stone will be much more durable for commercial use. @@HarplandProductions Awesome thanks. I hear from many reviews the arc needs a couple of minutes 2-4 to reheat the stones in order pull in a new pizza. Does the pizza party Ardore or emozione have that as well?
The XL having the commercial-grade side-oriented burner arching the flame with the dome shape is probably the most ideal 'wood-fire' style possible. It will probably be my next oven!
You can absolutely make bread in the S1, it won’t be as versatile as the dome because you won’t be able to use wood or use the steamer, but you can definitely make bread
I got the Gozney Dome last September for a KILLER deal, but I didn't use it until this past weekend. My only complaint is that I wish it could easily fit 2 pizzas.
I do not have to send them back, which is good and bad, it's nice to have a bunch of ovens but it's getting a bit out of hand now. I hate to get rid of any because i try to make as many videos using them as possible
Great video and overview of these 3 ovens. Can I ask, the chimney on the S1, does it have a cap that you need to remove, I'm asking because I have a shelter with plastic roof sheeting, the Rockbox is fine as the heat exits the front. Cheers.
Yes, the original dome and the dome S1 both have the small chimney with a cap that’s removable on top. If you’re concerned about the roof sheeting, getting hot as long as it’s at least a few feet above the oven you’ll be fine.
Yes, 10 mm thicker is a significant difference, the S1 will definitely retain heat better but it really depends on how you’re going to use it if you’re just making a few pizzas for the family it’s not that big of a deal but if you’re cooking 10 or more or using it for a giant party, and it starts making more of a difference
Great video, more importantly...great information. I am trying to figure which oven is best for camping with my airstream, you just helped me with some of those concerns with this video. Would you recommend ARC XL for camping?
I would definitely go to the arc versus the dome for camping. The dome is way too heavy to move around. You’ll struggle with two people just to move it around. The art can easily be picked up with one person. It’s only around 50 pounds.
As long as you have good ventilation you should be fine, ideally you would have a window or fan in side keeping the air moving. You just do not want the flame to burn out and then fill the room with gas..........
Hi, I recently discovered your channel and have been learning a lot from the videos. I currently use a Ooni Koda 16 which is OK but we live in a part of the UK where the wind blows most days across the flat fields and temperatures range from 32f to 70f during the year (with a few extremes). The issue with the Ooni is that cook times get much longer after the first pizza going from 90s to 4-5 minutes. So it is time for an upgrade with the Arc XL appearing to tick all the boxes. But the added insulation of the S1 and the thicker stone make me wonder if the S1 is not the better investment. Any thoughts you or others might have would be a appreciated. Many thanks.
Thank you very much for watching and reaching out! The arc XL or Dome S1 would both be amazing upgrades for you! Having less insulation in the Arc doesn't really impact the heat retention because it has a smaller form factor and the efficiency of the burner, etc. It's really going to come down to how and where you want to use your oven and which style and design you like better. The Arc XL is going to much more portable and if you want to move it to store it, etc then it's very easy for one person to move. The Dome S1 is much heavier and bigger and you will need at least 2 people to move it around. I personally like the looks and style of the Dome S1 but the price of the Arc XL is very nice and if you are only making a few pizzas here and there then it's prob the best option for the $
@@HarplandProductions Hi again, Thanks for your reply which was very useful to me in making my choice. I finally decided on the Dome S1 based on some of the points you made. We have no need to move the oven though with the stand having wheels we could reposition it to the other end of the patio quite easily. I liked the higher stand as well. The availability of the neapolitan arch was also a factor. And I liked the Dome S1 looks a bit better and as I don't plan to buy another oven in this life I thought I would spend the extra. Thanks again for you advice and the video. Darrill
Hi, does the steam injector work in the dome S1 version? In making pizza, does the stone on the dome s1 get cold after making a pizza? How long I need to wait to cook another pizza. I have a small pizza business and that’s very important for me to know.
The steam injector doesn't work for the S1 Version and no the stone doesn't get cold, with the burner on high it gets back to full temp in less than 1 minutes, so by the time your next pizza is ready to launch it will be back to temp.
Good morning! Thanks for the awesome video. I'm just outside Austin (Bastrop) and looking for my first pizza oven (much to my wife's dismay). I'm set on going Gozney, but I am torn between Roccbox, Arc XL, or Dome S1. I've got other smokers/grills on my patio, so I can move something on the smaller side when using, and putting it away under a cover when not would be ideal. If you could buy one Gozney oven today, would it still be the Arc XL, or is the Dome S1 a better buy with the current sale?
Hello Jordan, thanks so much for watching and reaching out! I would say that the Arc or Arc XL are going to be your best bets for what your wanting. Amazing ovens, great size and amazing burner and still small enough to move around for one person and store when not in use. If you do decide to go this route please feel free to use my affiliate link, it really helps my channel. us.gozney.com/HARPLAND_PRODUCTIONS
@@HarplandProductionsAmazing, I’ll definitely use that link. One last question: outside of a stand and cover what other accessories would you recommend? I see they have a mantle now for the Arc, good idea? I’m guessing one peels would be needed if this doesn’t ship with one like the Roccbox?
Have you cooked on an Alfa oven. I'm considering the Alfa Moderna 2 or a Gozney Dual Fuel Dome. I know there is a price difference. Do you have thoughts on how they compare otherwise?
I would put Alfa a step above Gozney, but like you mentioned it comes at a price, it's going to be almost $1,000 more. If you do go the route of Alfa i wouldn't get their table / stand, i don't know why but they make it standard counter height 36" which is nice for the table part but it's way to low for the oven and the oven opening isn't high enough. I do think i like the burner on the Dome better, it's a more traditional style burner. Long story short, the Alfa is a bit better quality but it's really in a different league, the Dome is still going to be the best under $2,000 above this price point there are quite a few contenders but Alfa is very nice.
Thank you very much for your quick reply with your thoughts. Great advice regarding the cart height on the Alfa, which really is way too low. I'm leaning heavily towards the Dome.
Glad you liked it, thanks so much for watching and please consider subscribing if you haven't already. I just posted my latest video reviewing a new spiral mixer, here's the link, check it out. th-cam.com/video/TG0rPYl7ymA/w-d-xo.htmlsi=S2uEcG2YxjaSpyRv
The stand doesn't fold up at all, you can fold down the 2 side tables very easily but to load it into a car / van you would need to remove the oven and then place the entire stand it fully assembled. Might be better off getting a folding table and the booster.
Putting wood inside brings the risk of getting ashes inside the burner, which is never a good idea. The idea of using wood is romantic, but by no means gives you any wood flavoring or smoke taste because the pizza only cooks and 60 seconds.
Ah I was hoping you’d give your preference between the arc and the dome S1. Forgetting budget which one out of the two above do you regard better? Thanks again can’t find any video which says which is superior
Thanks for the reply. Apologies I’m a bit of a novice but can I ask why the s1 it is a better oven than the arc just about to order a dome S1. Thanks again
Technically, you can convert it, but it might require a new burner because natural gas requires a lot more pressure than propane so you’ll have to have a gas expert either put a pressure gauge on your natural gas line to increase the pressure and replace the burner with the natural gas burner
Thank you so much for watching John. Thanks for the video. Very informative. I'm in the UK and its raining most of the time. Now its sunny 10 min later rain. Obviously not making pizza in the rain but if I start doing it and it start raining how would Arc do in the rain? Would it affect the display at all do you think? Thanks! Subscribed!
Thank you so much for watching and subscribing. Yeah, rain is not the best thing for Pizza Evans especially if the inside gets wet, I would highly recommend placing the oven underneath some type of cover or roof if you’re going to be making pizza in the rain if the inside, especially the stone gets wet, you need to be very careful the next time you use it you’ll have to turn the burner on low and let it cure again to assure that you have all the moisture out of it, but if it gets wet you, you run the risk of it cracking in the future
The internet NEEDS to know. What’s different inside the s1 vs the dome. Why couldn’t you put a fire tray inside the s1!? Granted you need to cover the gas burner and you don’t have airflow control. (No different to a normal pizza oven). Thankyou for this. Just bought the s1 - probably because of your video. Didn’t realize just how much smaller the arc is. I don’t doubt the arc does a good job, but I like the aesthetic of the dome for my space. How dumb is that decision making haha.
Thanks for watching! It's a very entry level hot tub but it's been great so far. It's made by Life Smart. a.co/d/7vOZeRS it's a plug and play model that plugs right into a standard 110 outdoor plug so i leveled the base in the yard and installed it myself!
great video by the way i just got mine from home depot yay i cant wait tomuse it. i also have a wood burning forno bravo so i now have the bestnof both worlds as miami is terrible for outdoor wood burning im summer as it is just too humid

its ok i found one at a home depot near me. got tomsay i love this oven. i have a forno Bravo but woodbis such a pain in Miami. I cant believe how great the Gozney is for the money. Thank you for the Vids very informative
as of now they are still not available in the USA, they are built / assembled on site so they have been working on the infrastructure to do that here but hasn't happened yet. I would love to have one.
Hi, looking for an opinion, I ordered an Arc xl in black on 3/6 and its backordered with no idea when its coming. My local HD has a new open box Dome SL marked on clearance for 900.00 Should I buy it? and cancel my Arc order? Your input would be much appreciated.
Personally i like the look of the Dome more than the Arc XL. Really comes down to if you want to spend more $ and have the space for a larger oven. The dome SL is going to take up quite a bit more space and be a lot heavier and harder to move around but like I said, I think it’s a better looking oven. At the end of the day they both will make amazing pizza, so it really is going to be a style preference
@@HarplandProductions Update: Thank you for your input, I couldn't pass up the clearance price @ HD and bought the Dome SL. I think I will be very happy with it. Cancelling my Arc XL order and extremely disappointed with the lack of transparency from them regarding when I would receive my ARC xl order.
Would you think buying 2 of these would be good for my pizza food truck business? I currently use the original Dome and the stone zaps out on me around 30 or so pizzas. My thought process is to buy 2 Arc XL’s and alternate back and forth. I also have a back porch on my trailer so venting isn’t an issue. Thank you.
On another channel someone tested the recovery time of the Arc. Based on that video it seems the recovery time is 45 seconds to a minute. So let's say you are doing 2-minute cooks. Add 1-minute for recovery. You could then in theory do 20 pizzas an hour.
@@HarplandProductions I was debating that but was afraid it wouldn’t be big enough for a 12” pizza. The xl claims 16” and from what I’ve seen, a 16” is super tight.
No but the stone is removable, Pro's and Con's with Biscotti are that they are very fragile and crack, break and scratch easily so really only ideal for Neapolitan pizza. I have someone working on a test Biscotti stone for me to try in this but Biscotti stones have to be a min. of 1" thick or 25.4mm which his 5.4mm thicker then the Arc XL current stone so the Biscotti stone will be a bit higher than the factory stone.
19:50 Strange. In our small pizza community we feel the difference in favour of wood fired. And strange as it may seem, electricity is better than gas:-). True, it's not worth firing up the oven for two pizzas.
Thanks for watching Joe. Don't get me wrong, i love the artistry and romance of cooking with wood, it's just the efficiency or lack there off with these smaller metal ovens. The end goal is to also have a large stone or brick oven which i will for sure use wood in.
This is one of the best reviews on anything I've ever seen. Great format, love your dedication to answering questions and how many details to include... Thank you!!
I'm glad you found it helpful, thanks for watching!
I know he already said in the video there's no difference in taste between wood and propane for pizza. But this is the internet so a lot of people will disagree and swear up and down they can taste a huge difference. This is how it works:
Pizza's cook in 60-90 seconds, 5-7 minutes for a long NY bake.
I couldn't agree more with you. Thank you so much for watching and taking the time to comment!
Facts
All the gozney ovens are stunning. So hard to pick one
I agree, they keep getting better and better :)
The man himself :) Vincenzo :)
I’m not buying any of these unless you tell me which one is haunted by that ghost that closed your gate. I definitely don’t want the model that comes with that feature
😂
I actually like the gate closing feature. 😂
😂
I went back and watched that a couple times, not sure what was going on there, either it was the dog and he got cut out when i edited the video or it was the wind :)
😂😂❤
Thank you so much for watching. I prefer not being sponsored, i want to be able to make the videos i want to make with the products i want to use.
You can never have too many ovens :) you are going to love the new XL!
You've come a long way with these ovens, amd your reviews are much appreciated. Surrounded by Gozneys!
Glad you like them! Thank you so much for watching!
I love your videos, keep going !
I would not choose Arc XL, lack of useful accessories, never.
Dome is my top choice.
Good choice!
What kind of access or ties do you want fii or r making pizza. You have a peel
I’d like to see temperatures at various settings. For example what temp can it maintain consistently with gas at minimum settings, half setting, and full.
will try to add that to future videos, thanks for watching!
Best video I've seen on this topic, thank you!
I appreciate that, glad you found it helpful!
Great video. I'm really liking the Arc XL. I do barbecue with a stick burner and you're on point about using wood.
Thanks 👍 I like it when folks side with me :)
It's kinda of a misconception that using wood for Neapolitan pizza gives
it a wood smoke taste. for Neapolitan you need the oven and fire super hot at around 850F when a wood fire is this hot it burns very clean (If using dry wood) so there really isn't much if any smoke, and the pizza is only in the oven for 60-90 seconds.
Thanks

Appreciate your thought, viewpoint.
You're doing Gods work brother haha.Cheers from rural Australia.I now know what Gozney I'm going with.
Haha, please tell my wife that :) Glad you found the video helpful!
What did you get. I’m sitting here tossing over the arc xl vs the s1. The decision is killing me.
I gave you a thumbs up bro! Thanks for the video. I am trying to decide arc xl or dome! I wish the dome was updated with the new arc xl burner
Glad I could help! Yes it would be great to have all of the versions updated.
You have the best, most detailed info on these ovens. Thank you. 👍
You are so welcome!🤗
I live in a cold climate and have a dome. In between pizzas the temp goes down pretty significantly. I use the nu2u door to bring the heat back up quicker.
I have no doubt nu2u develops a door for the Arc and Arc XL.
I am sure they will also! or Gozney will come out with a Neapolitan Arch
I'm getting ready to do a small outdoor kitchen by our pool...I didnt know i needed the arc xl or a pizza oven in general until watching your videos. Hope you do some more pizza cook videos with the arc xl.
I am always making pizza so don't worry, my next video will prob be comparing more ovens but don't worry i will make some pizza videos also :)

Hopefully that will be my next video coming out this weekend. Please make sure you are subscribed so you don't miss it. Thanks for watching!
The excitement come at the moment where you have your hand on the gas shutoff valve and you’re wondering if you’re about to ignite a fireball the size of your house or just bake a few delicious pizzas.
thank you so much! this is all the info I wanted. mostly just curious if I can launch 30 pizzas without the stone cooling down
I think you will be fine with this oven, the stone will cool a bit but will be back at temp in less than a min max
Thanks Matt, you helped a lot with my decision! Great comparison.
Glad I could help!
On the dome s1, can you switch farenheit to celcius version on the thermometer ? Thx
Yes, there is a button to easily switch between F/C
With Arc XL having a wider opening, does this mean that it does not retain the heat as well as the larger domes? Which one takes the longest to reach 400C?
The Arc XL is much faster at hitting the 400C temp, the door / opening is wider but the inside height is also much lower so it heats up and retains heat very well!
Very good video. I have been looking at these ovens for a while. Thought I knew a lot until I watched this. With my studies as a pro cook, I definitely getting one! The best of any made I believe

Working on it!
I think if you’re gonna use gas and you want the bigger oven, the S1 has a little bit better igniter, and burner than the original dome, but the new arc burner and igniter is even better than that
If u have natural gas, I would just use the lp gas propane tank for this no hassle to just plug it in
Great video! Looking forward to the launch!
Thanks for watching, just a few more weeks!

What is the difference between the Arc XL and the Arc? Is there anything the Arc does better? By the time I buy, Gozney may have the S1 upgraded!
I think your spot on, the Arc XL really does offer a bit more and a better price
The smaller Arc might be a better option, The roccbox is great, hard to beat, my only issue with it is/ was the burner and control knob in the back
Really appreciate you doing this follow up video.
Would be nice to see a comparison of the time to heat up, cooling down after cooking a pizza and how long the bases hold heat etc
Thanks. Do you have any insight on wether it could be stored outside if covered?
I think its time to get rid of my Roccbox and get the 14 inch version of the new Arc :) Something to think about. Only problem is you need the stands as well. so I doubt they will stop making the roccbox because its still amazing and portable and right out of the box you are set. You cannot buy an Arc without the stand, At least for me. Its a match :) 3 days left for a decision :)
Great video!
Hi! Do you think it's possible to cook with wood in the Arc XL or Dome S1, even though they're not originally designed for that purpose?

Glad you enjoyed it! I tried to make sure all the details were covered. 😎👍🏼
Thanks for the insights! Still love my original Dome, but some features from the Arc are really nice 😄
Totally agree!
I have lots of questions still 😢
To preface, I own two big green eggs.
I think having big green eggs, I wouldn’t worry about getting a gas only model, and I think the arc XL work perfectly for what you need
Do you get to keep the free ovens Gozney sends you? I also enjoy your channel very much. You do great work.
Yes, i keep all of the ovens they send

Price is not really an issue (both are the same price)
Im looking to do pizza partys at weddings, events, market etc.
@@kleiwerper I always make back to back pizzas in my Arc without any issues
The XL having the commercial-grade side-oriented burner arching the flame with the dome shape is probably the most ideal 'wood-fire' style possible. It will probably be my next oven!
so far i haven't found anything i don't like about it!
Can i bake a bread inside the dome s1? There’s a difference cause there’s no steamer?

@HarplandProductions wow that was a quick reply, I'm only just at the end of your video 😀 Thanks for the reply.
Are the thicker stones in the S1 better than the thinner ones in the ArcXL? Any differences in temp recovery times between the S1 and the Arc?
Yes, 10 mm thicker is a significant difference, the S1 will definitely retain heat better but it really depends on how you’re going to use it if you’re just making a few pizzas for the family it’s not that big of a deal but if you’re cooking 10 or more or using it for a giant party, and it starts making more of a difference
Your videos are awesome! Getting so excited for the Arc XL launch!
Thank you so much for watching!
You believe is ok to use the arc or s1 dome indoor but with a good ventilation? I am thinking about my bar and I have a 2m doors open all the time .
As long as you have good ventilation you should be fine, ideally you would have a window or fan in side keeping the air moving. You just do not want the flame to burn out and then fill the room with gas..........
Thank you very much !!!
Hi,
I recently discovered your channel and have been learning a lot from the videos.

How easy is it to fold the stand of Arc XL and let’s say to put it in a van?
The stand doesn't fold up at all, you can fold down the 2 side tables very easily but to load it into a car / van you would need to remove the oven and then place the entire stand it fully assembled. Might be better off getting a folding table and the booster.
@@HarplandProductions thank you. 🙏
Can I burn a piece of wood in the S1 next to the gas flame if I want to?
Putting wood inside brings the risk of getting ashes inside the burner, which is never a good idea.
Wood is great, and fun to use if you have the time to manage the fire and are going to be cooking enough pizzas to justify the extra time and effort.
My go to oven is the Gozney S1, if budget, weigh, size, etc are not a concern it's a better oven
Thanks for the reply. Apologies I’m a bit of a novice but can I ask why the s1 it is a better oven than the arc just about to order a dome S1.
Thanks again
Can you convert the original Dome to natural gas?
Technically, you can convert it, but it might require a new burner because natural gas requires a lot more pressure than propane so you’ll have to have a gas expert either put a pressure gauge on your natural gas line to increase the pressure and replace the burner with the natural gas burner

Can you use the arc xl in your garage with the door up? Is that safe?
As long as you have good airflow and or ventilation then you will be ok
The internet NEEDS to know. What’s different inside the s1 vs the dome. Why couldn’t you put a fire tray inside the s1!? Granted you need to cover the gas burner and you don’t have airflow control. (No different to a normal pizza oven).
Thankyou for this. Just bought the s1 - probably because of your video. Didn’t realize just how much smaller the arc is. I don’t doubt the arc does a good job, but I like the aesthetic of the dome for my space. How dumb is that decision making haha.

Can I bake two (10 inch pizza) in ARC XL ?!!
It can be done but they would need to be front to back which isn't ideal, it makes it very difficult to turn the back pizza.
Thanks for the video. Pretty much answered all thw questions
Glad it was helpful!
You could then in theory do 20 pizzas an hour.
i agree, this oven recovers very quickly
You might also consider the 14" Arc for quicker heat up and recovery time
@@HarplandProductions I was debating that but was afraid it wouldn’t be big enough for a 12” pizza. The xl claims 16” and from what I’ve seen, a 16” is super tight.
Good point!
Keep me posted if you do get one, i think you will love it!
Is it biscotti-stone?
