C/w Nana: Lao Spicy Algae Salad (ລາບເທົາ == Larb Thao)

  • In this episode of "Cooking with Nana," I show how to make larb thao (ລາບເທົາ), or literally, "spicy algae salad."
    Thao (ເທົາ) is green algae that grows in ponds. The thao in Laos is a lot cleaner than in USA, unless you have a special clean pond to grow it..
    Believe it or not, when Lao people first arrived in USA, we used real green algae to make this dish because the ponds and rivers used to be cleaner.
    I will be using spinach instead of real green algae because I can't find any green algae that is clean enough to eat.

    I have never tried using wakame, but it doesn't seem like it would work. I think spinach is the best subsitute and less expensive than wakame.

    Thanks for your comment. You are right, you don't have to put in the msg if you don't want to, but if you eat at my house, you can expect msg in the food I serve. :)

    @Chao Vang, yes you are right. I don't cook the spinach. Some people boil the spinach first, but I don't do that. This is not for eating with rice, but you can eat with rice if you want.

    We usually let it cool down before serving it, but it can be served warm for impatient guests. After it cools down, don't warm it up again. Store it in the refrigerator and it will last about a week or so. You just eat it plain, like a soup or salad.

    @msmooxmoo, I'm glad you stumbled onto my video, too. I try to make these dishes as authentic as possible, but growing up on America, we have to take a few substitutions and shortcuts. I also want to make them simple and easy. Thanks for your comment.

    @LaoInformation: Thank you for watching and commenting. I do realize that Laos has its own eggplants and chili peppers, but in American stores, the Thai varieties are more common. I don't want to confuse people who go out looking for Lao eggplants and Lao chili peppers.

    If you search wikipedia or google for "turkey berry" or "Solanum torvum" you can find more names for the berry we call "mak khaeng" in Lao.

    I felt so good to hear you calling us to come and eat at the end. Between 1972 and 73 I was stationed in Isan (Udonthani), and that Lao language was the one I heard spoken the most. So beautiful to hear again. BTW; that made me soooo hungry. Kop jai laiy!

    What about the seaweed called, wakame... I think.. like the dried ones in the bag? Could I soak that in water and use it as green algae alternative (isn't it the same thing)?

    I have never made it with anything else except fish. You could leave the fish out, but it would not taste right with any other kind of meat.

    hi Nanaks801 my wifes aunt makes a dish with shrimp pounded into a paste with bamboo and chilli's. She served with sticky rice. She is from Laos I was wondering to make the dish are these the only ingredients you need. I am sure there are other spices that she doesn't know how to say in English and we see her only a few times every few years. Can you help?

    That looks delicious i my aunt used to cook this dish every weekend. Makes me hungry i wish i live near your city so i can visit you for dinner! Lol. I am Laos-Vietnamese but i gre up eating Lao food. Larp & Papaya with sticky rice is my favorite. Thank you for your videos i will try to make this tomorrow! :)

    I love your recipes but here in France shops don't import padek for years now, I substitute with fish sauce or mam nêm but it does not taste the same ;)

    Euy Nana!!! OMG! Thank you so much for the recipe. I don't like fish so instead I used shrimp and minced it into the broth. So yummy! I am on a diet and trying to eat healthier...this was very healthy and filling. Side note: I love your traditional way of cooking. Keep up the great work. "Mun-si pen pbab si" I luv ya!

    MSG is present everywhere not only in South Asian food but in all food: bbq chips, frozen pizzas, canned food etc... Dumb people tend to generalize and boycott Asian food because we put MSG

    "Lao" is the adjective used when referring to the people/cuisine/culture/language of the country called "Laos". So it's called "Lao food", "Lao-style", and "Lao cooking". Laos (with the S) is the name of the country. For everything else, use "Lao" instead.

      I've never heard of people eating Champa flower. I only see people use for decoration.

    To the uploader of this video, the country Laos has its own Lao eggplants and Lao chili peppers. When teaching people how to cook authentic Lao foods, you should mention Lao ingredients instead.

    I make Larb Thao I don't use a lot of salt and msg. That is a lot of salt and msg you used. A lot of msg and salt is not good for your body inside. I wait for the water to cool down before I start blending it with the spinach. I steamed my spinach then blend it together with the fish.

    Turkey berry makes no sense, please don't be after those who not born with that cherry. We are born with this cherry so all other people should follow us. I operate an oriental store and I sale that cherry everyday and it is grow by Lao people and we name it "Cherry egg plant" Thank you and be your own.
