C/w Nana: Lao Spicy Papaya Salad (ຕຳໝາກຫຸ່ງ = Tam Mak Houng)

- Tam Mak Houng (ຕຳໝາກຫຸ່ງ == Lao green papaya salad) is probably the most popular Lao dish. Some may even consider it just a snack. It is served at almost every meal, and even in betwen meals. There are thousands of different recipes for tam mak houng. I will share two of mine.
INGREDIENTS
Nam Pa (fish sauce) [00:10]
Mak Len (tomatoes) [00:12]
Kapoo (crabs, frozen) [00:15]
Kapee (shrimp paste) [00:20]
Kapoo dum (black crab paste) [00:25]
Nam Tahn (sugar) [00:30]
Pang Nua (MSG) [00:32]
Mak Tua Din (peanuts) [00:35]
Mak Houng (papaya) [00:40]
Mak Nao (limes) [00:42]
Mak Tua Yao (string beans) [00:45]
Mak Kheua (Asian eggplants) [00:50]
Mak Len (tomatoes, again) [00:52]
Mak Phet (chili peppers) [01:00]
The two recipes I showed are pretty similar. One has padek, and one uses a substitute for padek. Please see the video for the approximate amounts of each ingredient.

Nana makes the best papaya salad I’ve ever had. After learning her recipe I’ve never EVer had any from a restaurant that’s good to me. It just doesn’t compare!

I just found this page and I like it alot and will follow up.Thank you for your video. I make mine just exactly like yours with all the same ingredients you put in. Someone asked what's the difference between Thai and Lao papaya salad well thai taste like something is always missing the sauce that they put in.. The key ingredients are the sweet crab meat and always use lime it's a sharper taste to it and never lemon. I also find garlic is to empowering!

Awesome! Tam Mak Huong the Lao style is so much better than the Thai version. You used my favorite fish sauce too. I like that fish sauce because it's not too salty. I live in Connecticut near the ocean and we put little black crabs in our Tam Mak Houng.

I have a quick question: I know us Asians always eat papaya salad but it's also ok during pregnancy, right? I did use a little of the store bought padek.

I like my with dried shrimp, shrimp paste, roasted peanut, honey, tomato, lime, garlic, pepper, fish sauce, Himalayan salt and eating with lettuces, cabbages...
