As long as you stay at low temperature sure but your meat there had barely a colour, I mean sure it's a manner off taste a this point and 140°C is enough to start maillard reaction but since the meat has a lot of water in it you definitely to miss out on the roasty textures.
Edit: I've just watch besciamella and no. Big no. It's vomiting: garlic in besciamella???? And have you published cooking book? Trent'anni di galera dovevano darti per sto schifo Ragù its made completely wrong,soffritto has to be put before meat and amount of garlic is ridiculous.

Thank you! You can assemble it and leave it in the fridge for up to 2 days before baking! When ready to eat, pop it in the oven and enjoy!

Why you use virgin olive oil ?
The heat destroys it anyway 😅
