- Learn how to make fresh homemade lasagna noodles from scratch! Only 2 ingredients (flour and eggs). Great for beginners!!
Ingredients You Will Need:
300 g Tipo 00 Flour
3 large eggs*
1 large egg yolk
*Note: For the eggs & yolk, the total combined weight (cracked) should be 185 g. Because eggs size vary, make up the difference, if needed, with an extra egg yolk or olive oil. Olive oil makes the dough more soft, supple and satisfying to work with.

I want to make the lasagna noodles hours before I build my lasagne. Would the lasagna noodles be okay on the counter for a couple hours as long as I have it covered with parchment paper?
Yes. Moderate to cool room temperature is best (use your judgement). Do you par-boil your noodles? If so, you can do that in advance too, and build later.
Question - do you have to boil the noodles after you make them? I assume no but wanted to confirm. Thank you!!
no, just put it in the oven with your ingredients!
I do. I par-boil them for about 15-30 seconds depending on thickness. However, I've seen it done via the no-boil method, so play around and see what you like best.
Can I use King Arthur’s bread flour or AP Flour instead?
Absolutely. You'll get excellent results. I use it all the time!
Can you use stand up mixer with dough hook to mix the egg and flour?
YES you can, I always use it for making soup noodles for the whole year.
Do you need to boil this pasta before building your lasagna?
Yeh for a couple minutes

Just eggs and flour. Like making egg noodles.
Just flour and eggs. If the weight of your eggs comes up short, or if the dough feels dry due to ambient temperature, I do add water to correct the consistency.

Can I make the noodles a couple hours before I put the lasagna together?
Yes. Typically, I par-boil them first before assembling the lasagna and lay in a single layer on clean kitchen towels (to prevent sticking). Play around with a version of this to suit your schedule.

No salt. I follow the traditional recipe using flour and eggs/yolk only. I salt the pasta water generously :)
