I don't think the Sword he returned is the same one they gave him. The Scabbard and Tsuba are completely different, but starting @9:17 he says he sent it to a friend who is a polisher, and then had the handle re-wrapped, and then says that it is now is 100% percent restored condition. How can it be 100% restored when you have an entirely new Tsuba and Scabbard. There are 3 things that could be happening here, the first could be They needed to film the rest of the episode and the sword wasn't ready yet, so they filmed the conclusion with a "dummy" sword. The Second is that Mike realized that this sword is Culturally tied to Japan's history, and returned it to some kind of Japanese Ministry of Antiquities, or He decided he wanted it and flat out just stole it and gave them back a different sword of similar value.

I think he might have actually swapped the blade behind the scenes with a modern japanese katana worth 15k. The hamon and grain of the steel looks completely different. The tsuba is replaced, the saya is replaced. It was probably discussed behind the scenes, and then they just left the detail out of the show to preserve the entertainment factor.

Nah it was a fair deal; before restoration, which cost over $3k, it was worth about $5k, and he got paid $1500. He got paid almost a third of the value of the thing, that is fair.
He could have googled Japanese Arms Specialists in the area and got an expert estimation and probably had it restored himself for the full value (if he was in a position to pay for restoration), but he wanted the convenience of walking into to a generalist and walking out with some money half an hour later, so that is what happens.
