Singapore Rojak (also known as Chinese Rojak) is a local Asian salad comprising a flexible mix of fruit and vegetables drenched in a sweet, sour and spicy peanut sauce. The exact contents of the salad may vary depending on your choice of fruit and vegetables, and whether or not you choose to include other additions like dried cuttlefish.
The delicious sauce is made up of a combination of sweet palm sugar (gula melaka), crunchy peanuts, piquant lime juice and tamarind, chilli to add spice and the unmistakeable dark, gooey umami taste of the rojak prawn paste.
This recipe makes use of mostly traditional ingredients like the jicama, pineapple, green apple, cucumber, taupok (fried bean curd), you tiao (Chinese fritters) and kangkong (water spinach). Also included is the torch ginger flower bud (bunga kantan) which adds a special zing to the recipe.

Fruit & Vegetable Salad
Ingredients for the sauce:
1 cup peanuts (roasted, skins removed, chopped fine or coarse according to your preference)
juice of 2 medium sized limes
3 tablespoons rojak prawn paste
70g gula melaka (palm sugar), grated or chopped finely
1 tablespoon tamarind paste, mixed with 1/4 cup boiled water
5 red chillis, blended
1/4 teaspoon salt
1/4 - 1/2 teaspoon torch ginger flower bud (bunga kantan), minced
Fruits, Vegetables and Fried Ingredients used in this salad
a handful of each of the following:
kangkong (water spinach), blanched
bean sprounts, blanched
jicama (yam bean / Chinese turnip)
pineapple
cucumber
green apple
taupok (fried bean curd)
you tiao (fried Chinese fritters)
