    Bess 'C' Average came out on the new test media at 41g. The second set of cuts was performed on the old tester. That average was 76g. The difference of 35g. I will need to check a few more knives using both testers, to determine what it going on.

    Always great to see you sharpen mate hope to get my hands on some gritomatic one day. Thoose bess tests does look like a little hit n miss to me but im a weirdo hehe

    Great sharpening video, while at the same time unintentionally invalidating the BESS system. Most people would simply brag about getting a sub 50 average, but you honestly point out that it may be due to the new tester. An 85% difference between averages illustrates that this thing is just a toy. Why did you get a new wire block, by the way?

    Jeff, pleasure coming back to your videos. I ended up with the venev centaur stones a few months back because these were out of stock. Now that they're back in stock, would you spend the extra money to buy them or would you stick to the venev? What's the difference in sharpening? Still learning so much. Thank you very much for all that you do for us lol

    Is this a decent stone to learn freehand with cheap kitchen knives? Or is there something different you would recommend? Gritomatic recommends against soft steel, saying it will cause increased wear… but I’m guessing that’s the case with all stones?

    Very cool stuff. You've got the best sharpening/whetstone videos on youtube by far. I always tell folks "check out Jeff Jewell on youtube if you wanna see how it's done right." I'd like to try one of those stones eventually if they're available. I've only used SiC stones such as the sigma select 240 and 1k, the naniwa 220, I'm pretty sure the Norton is too, I mean the 220 waterstone obviously the crystolon as well. I know Suehiro has some as well that look nice but expensive, including the 200 Debado and that stone G8 which is rated at 8k, but those grit ratings are weird sometimes. I mean the Cerax 6k is like a 2k shapton at best but the rika or whatever it's called 5k is actually a polisher.
