I was a sous chef there in another state for 5 years and I can gauge his accuracy, technique, and skill. I would say he's got a few months experience and could be much better with a years practice. Many of my work cooks had at least five years experience with some truly extraordinary talent. I wish I had taken some video of them cooking because it was truly a sight to behold, especially on a Friday or Saturday night with a full line of elite level talent. That was over ten years ago...
