    Brilliant! A little suggestion: if you put in the food processor the almonds immediately after pulled out from the oven, you'll get the almond paste way faster.

    can you use cacoa butter in place of the white chocolate?

      Cocoa butter is the main component of white chocolate, almost 50%. So the answer is yes, if you don't want to use milk or sugar or both.

      Hello :) We do not recommend using butter for this. Since almonds already have natural oils that come out as they are chopped you can avoid adding oil if you have a powerful food processor that does not overheat too much. Considering that you don't add any oil you need to mix the almonds a bit longer. Hope this helps.
