  • They are so delicious, I make them at least 3 times a week! I've been making this recipe for 20 years.
    RECIPE for Puff Pastry Croissants:
    250ml milk.
    2 tablespoons of sugar (40 g).
    7g dry yeast.
    Mix well.
    Sift 400 g wheat flour.
    Add 1.5 teaspoons of salt (9 g).
    Knead the dough with a spatula.
    Add 25g melted butter.
    Continue kneading the dough with your hands.
    Put the dough on the table.
    Knead the dough for 5 minutes.
    Lubricate the bowl with vegetable oil.
    Put the dough in a bowl.
    Cover the dough with cling film.
    Let the dough rise in a warm place for 1 hour.
    The dough has risen well.
    Lubricate the table with vegetable oil.
    Divide the dough into 10 parts.
    Form a ball from each piece of dough.
    Cover the dough with cling film.
    Leave it like that for 10 minutes.
    Lubricate the table with vegetable oil.
    Lubricate the rolling pin with vegetable oil.
    Roll out the dough ball with a rolling pin.
    Circle diameter 18 cm.
    Roll out all the dough balls.
    Put the dough on a plate.
    Brush the dough with 1 tsp softened butter.
    Step back 1 cm from the edge of the dough.
    The total amount of butter is 140 g.
    Lay all the pieces of dough on top of each other.
    Brush the dough with 1 tsp butter.
    Cover the dough with cling film.
    Put the dough in the fridge for 1 hour.
    Sprinkle the table with flour.
    Put the dough on the table.
    Dust the dough with flour.
    Stretch the dough with your hands.
    Turn the dough over.
    Stretch the dough with your hands.
    Roll out the dough with a rolling pin.
    Turn the dough occasionally.
    Roll out again with a rolling pin.
    Prick air bubbles with a knife.
    Roll out the dough into a circle 5mm thick.
    Divide the dough into 12 pieces.
    Make incisions in the dough.
    Roll the dough into a roll.
    Place the buns on a baking sheet lined with parchment paper.
    Cover the buns with cling film.
    Let the buns rise in a warm place for 40 minutes.
    Lubricate the buns with a mixture of egg yolk and a tablespoon of milk.
    Bake the rolls in a preheated oven at 200 °C for 5 minutes.
    Reduce the oven temperature to 160 C.
    Bake buns at a temperature of 160 C oven for 15 minutes.

    My mother-in-law was French and she made these for the family dinner on Easter and they were so delicious. I never realized how much work it was. I loved her cooking but her children took her for granted. My mom never made anything from scratch, my mom bought everything already made. One Christmas dinner she had set everything out and was scooping ready made potato chip dip into a bowl and she said next year I’m going to have to take more short cuts, my daughter and I looked at what was on the table, everything was store bought. Mom hadn’t made anything.

      How sad. My mom who is European still to this day makes fresh bread every day, she is 76 years old. European culture is so much different than American. She thought me how to cook and bake. I always made from scratch cakes for my kids birthdays and Christmas dinner is always everything fresh and made from scratch. It takes long time and all day but you also love to cook. Some women don't like all the work involved in it

      @@summert5021 I hope you thanked your mother for all of her hard work and let her know how much you appreciated her. When my mother-in-law had her funeral, I her daughter-in-law was the only one who cried for her. She had 3 daughters and a son (my husband) I really loved my mother-in-law and I was a wife, a mother and a homemaker. I worked hard at providing for my family. The 3 daughters all worked at jobs, one was a 4th grade teacher married to a math teacher in a middle school, she made him do everything. Another daughter was a nurse with 3 children and she is a terrible cook and another daughter has had a variety of jobs. She was a terrible cook too.

      @@summert5021 Your Mom sounds like mine, she was German and came from a family that owned a bakery. Since she baked everything from cakes, breads and cookies without using a recipe, if I wanted to make it, I had to watch carefully to make sure I got all the ingredients and amounts right! I still bake everything to this day and I am 84!

      I love to learn how to do everything from scratch yesterday I made cinnamon rolls from scratch did the dough, the cinnamon filling and glaze from scratch and it taste delicious and so soft too. I will admit I do take some short cuts and buy already made sauce and spaghetti in a box when I decide to do spaghetti and meat balls just the meat ball I do from scratch.

      @@vivianaortiz4951Pues para ser tan lista no lo eres tanto. El PAN y los Brioches se hacen con harina de fuerza ( no floja) y hay que añadir levadura.
      Por lo tanto, el que sea floja ó fuerte, no indica que tenga que llevar ó no llevar levadura.

    Hoy he hecho los croissants para merendar.Están buenísimos!!!
    Lo único que modifique de su receta fue el tiempo de cocción en el horno y los grados.Los hice a 180 ⁰C y durante 20 minutos.

      Azúcar: 2 cucharadas soperas.El sobre de levadura seca que compro en España como ya es de 7gramos lo utilizo entero.
      Harina: 2 tazas y media aproximadamente de las grandes de desayuno.
      Sal: Una cucharadita pequeña.
      Mantequilla antes de derretirla: 1 cucharada sopera.
      Espero haberte ayudado.

    And ABSOLUTE success! Thank you so much. Just 2 little things I had to change: more flour is necessary to obtain the dough and the "fueillete" should stay either longer in the fridge or a little bit in the freezer in order to shape the croissants properly ;) EVERYBODY LOVED IT!
