There is an OFFICIAL Bing Bong minifigure, well, it's in a videogame but it's official. There's this lego videogame about the incredibles 1 and 2. In the open world, you can build different pixar-themed things around the city that also gives you a character from the movie. One of them is imagination-land that comes with Bing Bong. I think you didn't know that, but you can look up pictures from the game.
Make some of the villains from the Scooby Doo mook animations films, like Lina, Simone and Jacques (from Zombie Island) Sarah and Ben Ravencroft (from The Witches Ghost) The 3 aliens and Crystal and Ember (from Alien Invaders) and The Phantom Virus (from Cyber Chase)
Technically there's already an official LEGO minifig design of Bing Bong from the LEGO Incredibles game but they never actually made a physical minifig with that design. Edit: typo
Both are as fantastic as always :D I would recomend, with the Nostalgia figure, to have her head sunk in a bit into her body, as she is far too tall atm. Similar to how the SpongeBob head worked, you can have a cut out into the head so the body would slide in a bit, giving the illusion of a more stout look
