I’m glad that we never have to use canned or boxed coconut milk. In the Philippines, we buy the coconut itself in the market and ask the seller to grind and squeeze the milk while we wait. It’s fresh and cheaper 💕 I started using it in lattes 😊

I love coconut milk. There's this simple but amazing chicken stew recipe from Guam 🇬🇺 that I used to cook all the time. Whole boneless, skinless chicken thighs in a big pot covered over medium-high heat. Once thoroughly cooked, throw in lots of ginger, garlic, onions, carrots, green beans and seasonings to taste. Cover again. Drain nothing as you need to let the chicken's juices soften the vegetables. Stir moderately. After they're softened, turn off the heat and remove the pot to an unheated stovetop. Add a few cans of coconut milk and stir frequently but gently, letting the residual heat of the food WARM but NOT COOK the coconut milk. What you want is a thick stew. Cooking separates the fats and water in the milk and you'll get something thin and soupy. Serve and enjoy!
