That's what Mathilda says at 1:39
She is writing the name of a girl that she doesn't like to check in at the hotel. If something bad happens in the hotel they will not know their real names.
You can see in the scene where where Léon gives a dress to Mathilda when the guy from the hotel knocks on the door he calls the name Mathilda wrote "Mr. MacGuffin".
