    I’m half Korean married to a Mexican and thankfully him and his family has been exposed to Korean food before I met him and they love it. My Mexican MIL sometimes makes cucumber kimchi and serves it when her Mexican friends come over. She said they need to try other foods bc all they want is Mexican snd she gets tired of eating Mexican for every meal. I married into the right family lol!

      I’m korean and my husband is Mexican too! And his mom used to work with korean employers so she very exposed to the korean food lol I was surprised she knows korean words and foods lol my hubby is trying a lot of korean stuff with my parents now :) it’s fun and amazing

      You eat it like a pallet cleanser, so with rice and various greasy dishes or fried meat.
      Kimchi goes well with meat, especially heavily charred and grilled meat that has a lot of smoke due to the char.
      Korean BBQ needs kimchi to clean you pallet in between tasting meat and such.

      When I was a kid I saw a pack of kimchi, I tried and I couldn't take it 😨 but when I grow up I learned to like it with mix of kimbob or any seafood.

    The eldest abuela should try geotjeori, its basically gimchi that isn't as salty and hasn't been fermented and is sweeter, its meant to be eaten within a few days, and is usually made in small batches. I actually like this type of gimchi. It will also ferment as well and be a more sweeter sour flavor due to adding more ingredients like Asian pear and sugar.

      @@uncertifiedlinguist8396 actually, it may have changed their minds. kimchi is not meant to be eaten the way they served it in this video. it tastes MUCH better when eaten with other things like korean BBQ, and I personally love to eat it with black bean noodles. it helps take away the strong vinegar taste and overall just tastes a lot better.

    I am mexican and I love kimchi- the more sour, fermented/old, it is the tastier it is for me 😋. Also, cucumber kimchi and green onion kimchi are just as delicious👌🏼.

    I'm Puerto Rican, and my daughter is married to a Korean man. When they visited, they brought some over...store brought. But nothing beats home made.
    When I visited Seoul, S. Korea, I ate so many different dishes. Kimchi is a wonderful side dish ...and there are so many different types of kimchies. A summer favorite of mine is cucumber kimchi.
    In fact, I'm making a small amount of it right now. My napa cabbage is soaking in salt water...in a few minutes, I'll chop up the other vegetables and then make the paste. I'll eat some right aways and the rest will last no more then a week or two. I can wait until summer, when I can find more napa cabbage....10-12 lbs ...so, I can make more..that will last me about 2.5- 3 months. Yummy

    The sour flavor of aged kimchi comes from advanced fermentation about a month after jarring. Fermentation produces mostly **lactic acid**, along with a little vinegar and carbon dioxide. Some people call kimchi a "pickle" and say it tastes like vinegar, but this is not true. Pickling is a preservation process where vegetables are soaked in vinegar and salt. Kimchi is made by dehydrating the vegetables with salt for a few hours, washing thoroughly to remove most of the salt, then mixing them with aromatics typically including at least onion, garlic, ginger, and microgreens like green onion, chives, mountain herbs, etc. Korean red pepper flakes, which are prepared using low-heat dehydration and come out redder and milder than normal red pepper flakes, are usually added to kimchi paste (the blend of aromatics + chopped microgreens) to give everything a red color, although adding chiles is not required (baek-kimchi = white kimchi has no chiles). Usually julienne cuts of radish are added, but certain other root vegetables like carrot are rarely used. The vegetables are thoroughly mixed with the paste and jarred with a pressing motion to expel pockets of air, which should be repeated almost every day as the fermentation produces carbon dioxide. Keeping the kimchi free of air encourages fermentation, because in the presence of air there are more efficient energy processes. The kimchi will then ferment at room temperature for 1-3 days depending on your climate (colder=>longer). This causes Lactobacilli and other nonpathogenic, probiotic bacteria to grow in the kimchi. This community of bacteria cause the vegetables to be preserved and confer many gastrointestinal benefits, including vitamins and minerals from the vegetables and beneficial bacteria. At any point, even during pre-fermentation, kimchi may be enjoyed, but after the 1-3 days room temp fermentation, it is refrigerated to extend shelf life. After about a month, it becomes more sour and it is used for other recipes. I prefer sour kimchi, but it is usually preferred for things like kimchi pancakes and kimchi soup. Kimchi, sour kimchi, and kimchi juice are all used as side dishes, garnishes and ingredients in many Asian foods, and the kimchi process can be (and is) done to many vegetables. Nappa cabbage (baechu) kimchi is an essential staple of Korean food; it's like rice. But because it's so delicious, it has been exported around the world and has inspired fusion cuisine, like bratwurst hotdogs topped with kimchi instead of sauerkraut.

      Taco Bell is only good if you eat it once every... few months LOL. For Hispanics of course. My mom likes it only sometimes, she knows the meat isn’t the same as the one she cooks. (I used to work for Taco Bell myself and brought her some.) she’s like “oh.. oh certain things are good. But why don’t you guys pack the food up with more meat?” In reality we do like 10% meat, 70% lettuce and 20% cheese 🤣🤣🤣

    Kimchi is a side dish, so even koreans don't like kimchi without rice or any main dish. It might be too salty or spicy. Kimchi from different countries also tastes slightly different, so if any of you want to try kimchi, you should buy it at a korean market.

    Ngl the smell can be hardcore, but the taste is unmatched. Could've served cooked with some rice or fried eggs too. Cooked kimchi is way different and tastes deeper, and likely changes minds about the initial perception of kimchi. Plus, pickled foods are good for your gut bacteria. If that was legit kimchi, there ain't no vinegar in there. All lactobacilli fermentation goodness 💖

    my guess is they bought it premade in a jar. you really test your luck with that because often they add perservatives in it that makes it really sour and zingy. what you need is either homemade or the stuff you get in korea, at least if youre gonna eat it plain. also, i think they would like kimchi stew which is really hearty and meaty.

    Kimchi to me went like sushi: the first time I tried I almost vomited. Later on I began to really love it. It's an acquired taste.

    You should add rice with it I heard people said that it tastes better with rice because it’s less salty and adds flavor to the rice😋👌👌

      If you don’t like kimchi you won’t like it anyway. I’ve tried a lot of different kimchi dishes and I just can’t do it. As a Mexican I’m used to a be. Different type of spice and Korean spice is not good at all in my opinion

      sugar is suppose to be added to it to tone down the vinegar taste cause it’s be fermented for a long time and i like my kimchi cooked but it’s peoples taste 🤷🏽

      Estephany De Luna I think Kimchi is an acquired taste. After eating it regularly, I enjoy it more now. Especially with fire noodles or sausage and rice.

    My aunt bought kimchi we tasted it and we never touch it again on the fridge for months then i was hungry and decided to give it another try. And i finished the whole bottle. Now kimchi is my favorite i always buy in kilos whenever i had the chance

    The thing is , I love my Mexican identity. But sometimes mamas put me off bc of this type of attitude of hating to try new things and making faces at it....is mad disrespect luv 😔😔 but alas, they are our mothers...

      My parents would take us to many different ethnic restaurants growing up and they would make different types of food at home. We rarely ate mexican food growing up and they both are from mexico city. My family was exposed to a lot of different people from all over the world because of their clients are mostly non-mexican. My mom would be making authentic arabic hummus listening to country music while talking to me to in Spanish😂.

    I love kimchi, my grandmother by marriage was from Korea so my mother would occasionally make Korean food like bulgolgi. We'd eat it with kimchi and white rice, so good.

    May be they gave them the store bought kimchi which tastes sooooo different in a bad way of course. May be that’s why they reacted that way. I’m sure they would like traditional homemade kimchi..
    Personally, I just LOVE kimchi!! And it goes well with everything!

      Es Em Curtido is a Salvadoran dish. It’s fermented cabbage and carrot. It’s usually served with pupusas, and it’s really good!

      Its literally curtido lol. Different ingredients but very much the same concept of preserving cabbage through fermentation. Like sour kraut too.

    I’m Mexican and I love kimchi and rice, it’s a beautiful combination. Nato is another one of my favorites but I’m forbidden to eat it because it smells 😢. I really enjoy eating things from other cultures it’s a wonderful experience.
