Danish Dough Whisk for Sourdough Mixing?

  • After seeing some folks using danish dough hook(whisk) and a lot of advertisements claims that it works for bread dough and mixes 3 times faster, I decided to try it out and see if it's actually good.
    Please keep in mind that this experiment only applies to wheat variant doughs.

    keep in mind that I'm not trying to say that this thing is completely useless, i'm just saying that it's not good for wheat sourdough bread. it's probably pretty good for mixing things that doesn't have gluten. also folks told me to just use it for incorporating, not kneading, but that's literally what I did at 0:57 and I did not like it at all. My whole point here is that it felt kinda pointless because while it's in fact quicker and easier to incorporate using this thing, but because it's such a pain to remove dough scraps from the thing and wash it, I wasn't saving much time in the end.

    I actually tried it one more time after reading the comments. The dough hydration was at 75% and I only used it for incorporation, not kneading. It performed significantly worse than I remembered, and I wasn't saving any time at all when compared to silicone spatula. This is probably due to the hydration level being lower than the one presented in the video, as the thing's efficiency does seem to increase as the dough hydration increases. You might be able to save some time with a higher hydration dough like the one in the video, but from my experience the actual amount of time being saved was very small. silicon spatula is incredibly versatile and could be used for almost everything, and it already handles the initial dough mixing stage very well. really this video could be summarized to one sentence "just use a silicon spatula instead". i find that this thing has very little use case compared to the spatula and it's very hard to justify using it when it barely outperforms the spatula. if you have a lot of use case for the whisk then things might be different for you though.

      For mainstream wheat or even spelt sourdough, the whisk is pointless. Just use a strong metal fork instead and knead later on.
      On the other hand when making a danish rye bread 😉, this thing becomes very helpful. The mixing is more efficient and less messy while achieving the right consistency of the dough. A fork for mixing does not work very well with rye. Rye dough is if it has more than 50% rye flour.
      If you often bake rye breads like in northern Europe: Germany/ Netherlands/ Denmark / Sweden, etc. this gadget can make things a bit more easier and more enjoyable. If you do not, then it is a complete waiste of money.

    Try this. After mixing with your danish whisk, switch to a plastic dough scraper. Use it to cut off the remaining dough from the whisk. Proceed to scrape and fold the dough while turning the bowl. This method let's you avoid directly touching the sticky dough with your fingers.
    Regarding the clean-up, use a dish brush with running water, instead of your fingertips.

    I think you used it for making the wrong kind of bread. I watched several other videos and they all made dough that stayed very wet more like a batter. Maybe this is why it didn't work for you.

    The first part looks like mixing to me, but once you have everything in a ball, I see it as kneading the dough which must be my hand.

    It is for mixing, not for kneading. Need to learn what it is for before giving a bad review.

    Yes. They aren't for kneading bread dough! They're for incorporating the ingredients, and batter and softer doughs too. And yes, it's faster. And easier. To a point. When it's mixed, you start kneading by hand. What's wrong with that? Did you ever try using a brush for washing? It works great on everything.

      Useful in other baking recipes when you dont want your hands to be filthy
