I tried it today... Turned out Awesome... Alhamdulillah... I Barbequed on Coal... And added few more ingredients viz. Elaichi powder, mustard oil, chaat masala... But all in very less quantity... I omitted Spring Onions as they are not available here in summers. So just added one big Red onion. So the summary is: Recipe is Perfect. Food Scientist Rocks!

Great description and recipe as always. I live in Canada and I have been cooking for quite some time as a hobbyist. I always try to go into nitty-gritty details as I try to bring the same taste of the food as I had experienced when I was back in Karachi and I still have that flavor on my taste buds. But ever since I came across your channel, I anxiously wait for your next video. Especially for desi recipes, your videos are informative at the same time humorous. I have never seen anyone explain the ingredients in such detail and with a scientific explanation as you do. As you said, I always use fresh ingredients and for sure it makes a lot of difference in the finished product. This is so true when you say... For some reason people get offended way too often, eventhough har woh shaks jo woh comment sunna hai uska yeh matlab hai ke woh aqalmand hai. yet still people find it offensive so i have stopped. @@mansoorhaq2239 bbq them on the highest heat possible or else they will dry up too quickly. papaya has the tendency to dry up cooked meat very quickly. I can predict that you will like the one with peepli and kebab chini. Specially kebab cheeni.

im sorry for the late reply. gruday ki charbi se kebab tootay nahi hain. yeh na ho tow stomach fat bhi use kiya jaa sakta hai. woh bhi na ho tow majbooran charbi ke nikal ghee bhi is mein use ker saktay hai werna charbi wala gosht use kerian. lekin phir agar kebab tootay tow hal bus gurday ke charbi he hai. Bad elements exist in every society. Do the British butchers not make veal by soaking pork in milk for 3 days? The Chinese create food scandals every day. Greed compels people to do bad stuff. Problem becomes more serious in poor countries.
I've been making BBQ ever since I was in college. Stability of kababs on skewers have been an elusive myth. A friend from Karachi advised me to add some Suhaaga while mixing qeema for seekh kabab. I never had a problem with dropped wasted kababs after that. Ratio is 1 tbsp per kg of beef qeema.
My wife loves cooking but hates cooking programmes because of faaltoo talk and unnecessary phone calls. She has started watching your videos because of your tremendous level of knowledge of ingredients and focused approach.

I used Beef Kidney Fat. But its upto you. You can use mutton if Beef is unavailable in kerala. I bought it a long time ago for 10,000 Pakistani Rupees therefore the price I bought it for will be obsolete. Its Chinese I assume. Which ever Machine you buy Just make sure its at least 1500 Watts However these machine are for domestic use only. Let me confess I have never heard about Chandan kabab before but it looks similar to Greek Gyro. They also mix 2 different kind of meat beef and sheep. I have a question, as you mentioned in your video, that these kababs should not be baked in oven. My question is that it is applicable to all type of other kababs as well ( I.e. they should not be cooked in oven). Second question (off topic) is that usually in Arabic or Turkish food they use a spice called Sumac. I love that spice but don't know where to get in Karachi ( not in Imtiaz/Hyperstore/metro) Any suggestion! Thanks in advance.
Chandan kebab is a growing phenomena here in karachi, maybe thats the reason you have not heard of them before. As for the use of oven, well all mince meat kebabs should be grilled or bbq, however stuff like tikkas can be baked. As for sumac. I cant find it here either in karachi therefore I usually get my sumac and zaatar from UAE

buhat zabardast flavor ata hai kidney fat say in kebobo mein. other than that without the kidney fat the kebabs can fall apart. you cant replace kidney fat with any other kind of fat aur ghee or oil. kidney fat binding agent ka kaam kerta hai. wese iski ek replacement hai. meri seekh kebab samosay ki video dekhain. us mein kidney fat ki replacement ki baat ki hai

Moisture in meat causes the meat to fall off the skerwers. Either the meat quality isnt good i.e. pressure wala ghosht. Or maybe you washed the beef which you should not specially for bbq. Another reason is absence of or too little quantity of kidney fat. increase the amount of kidney fat if required.

Because other then extreme macro closeup shots at the very beginning the rest of the video is fine. As I have said, I dont have unlimited resources and improvement in equipment will take time.

150-200 grams kidney fat
1/2 cup bunch of haradhania
1/2 cup podina leaves
1/2 cup Hari mitch
4 slice
1/4 teaspoon powder kababcheeni
1 teaspoon red chilli powder
1 teaspoon kali mitch powder
9 garlic cloves
2 tabsp adrak
Garam Masada
500 grm green onion
Salt to taste

I've been making BBQ ever since I was in college. Stability of kababs on skewers have been an elusive myth. A friend from Karachi advised me to add some Suhaaga while mixing qeema for seekh kabab. I never had a problem with dropped wasted kababs after that. Ratio is 1 tbsp per kg of beef qeema.

I used Beef Kidney Fat. But its upto you. You can use mutton if Beef is unavailable in kerala. I bought it a long time ago for 10,000 Pakistani Rupees therefore the price I bought it for will be obsolete. Its Chinese I assume. Which ever Machine you buy Just make sure its at least 1500 Watts However these machine are for domestic use only. Let me confess I have never heard about Chandan kabab before but it looks similar to Greek Gyro. They also mix 2 different kind of meat beef and sheep.
I have a question, as you mentioned in your video, that these kababs should not be baked in oven. My question is that it is applicable to all type of other kababs as well ( I.e. they should not be cooked in oven).
Second question (off topic) is that usually in Arabic or Turkish food they use a spice called Sumac. I love that spice but don't know where to get in Karachi ( not in Imtiaz/Hyperstore/metro) Any suggestion! Thanks in advance.
Chandan kebab is a growing phenomena here in karachi, maybe thats the reason you have not heard of them before. As for the use of oven, well all mince meat kebabs should be grilled or bbq, however stuff like tikkas can be baked. As for sumac. I cant find it here either in karachi therefore I usually get my sumac and zaatar from UAE

buhat zabardast flavor ata hai kidney fat say in kebobo mein. other than that without the kidney fat the kebabs can fall apart. you cant replace kidney fat with any other kind of fat aur ghee or oil. kidney fat binding agent ka kaam kerta hai. wese iski ek replacement hai. meri seekh kebab samosay ki video dekhain. us mein kidney fat ki replacement ki baat ki hai

its a domestic meat mincer. Its a very generic Chinese brand I guess. Buy any good high powered one. ANything over 1000W will do

Moisture in meat causes the meat to fall off the skerwers. Either the meat quality isnt good i.e. pressure wala ghosht. Or maybe you washed the beef which you should not specially for bbq. Another reason is absence of or too little quantity of kidney fat. increase the amount of kidney fat if required.

Because other then extreme macro closeup shots at the very beginning the rest of the video is fine. As I have said, I dont have unlimited resources and improvement in equipment will take time.
