    Everything is fine but Eno (Chemical), i prefer to use 5 gms of fenugreek (Vendhayam in Tamil) soaked with Moong daal and again fermentation naturally before you add green chilli, curry leaves such.... It maybe more soft and Natural ingredients. Moong Daal iddly without rice, Good idea.

      Yes, u can add baking soda, even that is optional. Manytimes I dnt use both, still idlies L b good..

    Was good- the only problem was it didn't rise up . Wonder what went wrong. Does the curd have to be slightly sour for the acid to work on the cooking soda?

      Sri Guru Datta Jai Sairam you can skip this but if you want soft idli you have to add this or I think 6 to 8 hours for fermentation

      Its for the soda bicarbonate.
      You can add soda bicarbonate used in baking to make the idli rise and be soft.

      You can either add cooking soda OR skip curd while making batter and allow the batter to ferment for 6-8 hours and then make idli. Happy cooking 😍

      @@ButterKitchen thanks for the help! It turned out really well. They taste really good and are healthy too :) In the second batch I added a little of rice flour to make it carb plus protein but didn't turn out fluffy and became solid lol😁. It could be because rice flour was not fermented.
